Lauren! When you were talking about a cheese sauce, I remembered that I haven't seen anyone use or talk about my method before. It's starting with sauteing garlic with about 2 generous tbsp or more of earth balance, making a roux, then adding a cup of stock, ~2 tbps nutritional yeast, ~1 tbspsmoked paprika (essential), salt and pepper, then whisk until you like the thickness. My meat eating friends said it tastes just like cheese and they adored it. You should give it a try if you haven't tried it before!

I was in a vegan restaurant in Asheville and I got this "fish sandwich" on French bread. It was a lemony quinoa patty wrapped in nori and tempura fried, topped with tartar sauce. Tasted just like fish! It reminded me of something hot for food would do.

I have been doing mushrooms sandwiches similar to this for years and high recommend it. I add vegan cheese to it at the end. but more important I use rum and a rum and raisin bbque sauce... I also add thai coconut seasoning too or sundried tomatoes and summer savory, sage, thyme and celery seed cumin mix... it is all good . using more than one type of mushroom works too. I love it on an Italian or Portuguese toasted bread. I eat these monthly and add to nachos or tacos mmmm heat. yum

Lauren i love you style of cooking. Probably cause it is also mine. Been vegan 8 years ago while i was pregnant. It was great. I loved it and the doctor (regular one) looked at my menu and agreed to it. Baby was healthy and mama too. But life takes you away sometimes and now, i really want to go back. One suggestion I would make is it either get a sponger cover for the mike so close to your mouth, or just not use one as the sounds of the you chewing are a little bit off putting for me, and I know your previous videos didn't have such a strong mike so close to the mouth..
