I always add a skosh of naturally fermented plain sauerkraut brine to any "aged" cheese sauce I make, like cheddar or parmesan. Natural salt brines give that special lactic tang to nut or veg based products that don't have cultured dairy in them. It must be balanced out by a neutral sweetener, but it works. Really enjoyed the process in this one and how enthusiastic you are when everything's mixed in the pan! TFP : )

Lauren I'm not sure if you know but once you open a can, you shouldn't put it back in the fridge in a can as not only can the taste of the tin dissolve into the food but there have also been cases of botulism which is a food borne disease.. the latter isn't as common anymore but idk just might be relevant regarding the tinny taste :)

Indian Black Salt is really added for it's sulfur content, hence da "eggy" taste. Sometimes heat can make that go away fairly quickly, so you add it at the end :)

So I made my own version of this carbonara, very similar to your sauce, I cannot believe the zucchini and cashews made such an incredible sauce, I didn’t have the black salt but the zucchini gave it that eggy flavor. Wow. Best thing I’ve ever made!!!!! I’ve been so inspired by you. I’m very careful to not waste any food. I make crazy dishes out of random ingredients as well and most of the time they come out incredible. It is so refreshing to see another food blogger cooking in this way. When I make my version of Carbonara, I use white beans for the sauce. I blend them super smooth and thin it out a little with water and/or non-dairy milk until I get the consistency I want. That usually makes for a preeety thick and creamy sauce and I love the taste (mixed with everything else of course).

5 years later and I still make this recipe all the time! Instead of vegan meat I throw in a combination of spring onions, green peas , baby spinach, or fresh oregano or basil. Sometimes I will add vegan cheese into the blender and simmer the sauce to make it creamier and fattier, but it doesn't even need it. Thank you so much for this amazing delicious recipe, it's one of my favourite things to make. My non vegan partner was mind blown the first time I made it for him and now it's one of his favourite things I make too.

I made this last week for dinner, but used tromboncino instead of zucchini, because a friend gave us some from her garden. I substituted white wine vinegar for the pickle brine (but should have used a bit less, probably 1 or 1 1/2 tbsp of the white wine vinegar) but it was so good. I am a huge fan of carbonara, and your recipe is now one of my go-to's for a yummy dinner whenever I get a tromboncino from my friend!! Thanks so much! =D

This looks legit Lauren :) One thing my eye lacked though, was parsley. To me the essential of a carbonara is parsley. However recipes?! Calls for creativity and if parsley was not on hand leave it out. You could also use mushroom or eggplant bacon as a substitute. The "vegg" is also very handy in that dish. Anyways good job as always :)

You can also chop some more zucchini in small cubes and fry it on a high heat until it is crispy and brown. That's what they do in Italy to make vegetarian carbonara.

i made this tonight for dinner! i changed it a bit, a used broccoli stalks instead of zucchini because i had weirdly massive amount in my fridge and used acv instead of pickle brine, i used vegan chicken strips i cut up and fried with your bacon marinade as the "bacon" and added kale

I use mushrooms to make "bacon"! I cut them in strips and marinate them in soy sauce, smoked paprika and a little bit of sriracha. :)
