I had this many times at a Thai restaurant in Hollywood. They would ask if you wanted red or yellow curry. They would serve it with rice. I'm going to try it with mung bean glass noodles instead of the ramen. I'm also going to add a few more veggies like sugar snap peas, broccoli and carrots

It comes in little jars about the size of tomato paste jars; it is the ingredients/spices for red curry in a paste form rather than dried. Thai kitchen brand is available in regular supermarkets, in the Asian food section.

This isn’t Thai food. This is weird ‘vegan’ specific food. Why does good food have to be veganised when there’s so much great food out there in the world that just happens to be vegan already. Red curry paste has dried shrimp in it, so what is this paste? Why do the quantities of spices look so frugal compared to real Thai cooking? What is ‘vegetable broth’ - just any stock flavoured with vegetables? Loads of great Thai recipes happen to be vegan, so what is this abomination?

Oh absolutely! It's just labeled as vegan so that those who practice that diet will know that it is indeed animal product free. It's my favorite recipe!
