A vegan Thai green curry to satisfy even the most hardcore meat eaters (such as my husband!). About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. Pai! I’m trying to learn how to cook Thai food because I grew up there, but my family is Japanese so I never learned how to make these dishes. You’ve totally changed my cooking game and I can’t thank you enough :)

Since Shrimp paste is VERY salty, another Umammi option is Marmite or Vegimite. I tend to use half Miso half marmite after I learned about the miso option from Pai.

I am not a vegan, but am aiming to eat more plant based meals. Pai I was expecting you to try one of those new vegan fish sauce subs, but miso or doenjang is a brilliant sub that have already been proven to offer umami! The dried shitaki is even more brilliant! Plus these are items that I already have in my pantry! This inspires me to experiment with other umami agents in my pantry.

Love when you forget stuff. Nice to know I'm not the only one!!! Making this today. I usually add shiitake mushrooms to mine. I also like some heat. I add red thai chilies. Yum. I love how quickly this comes together.

Thanks for these recipes. I've dated multiple vegans in the past years and have introduced plant-based foods to make my life richer in different taste experiences. Asian cuisine is brilliant for that with the plentiful use of exciting and tasty vegetables and built in plant protein sources (helps with my protein goals for training). Also the fact that asian cuisine isn't trying to substitute for meat most of the time, the foods and sauces just taste good as they are. With foods like these I can impress my partner. You can't imagine how much a vegan lady appreciates when a non-vegan man serves them a delicious vegan meal.

I've used many a vegetarian store bought curry paste but never added anything extra to them to add bonus flavor, totally gonna start adding miso at minimum to all my curries, sounds yummmmm!!

I lived in Chiang Mai 3 years, I would eat green curry daily. My fave! I now live in Mexico, they sell green curry paste but it's hard to find basil which really elevates the freshness.

Pai, these vegan-friendly additions are gamechangers. I never thought to grate dry Shitake mushrooms. Or use the tub of Korean soybean paste hanging out in the back of my fridge. Thank you!

I like how she also mentioned doenjang, because although miso is flavourful it is too delicate for stews unlike the hardier doenjang.

I love fried tofu VERY much.... I cube and coat in corn starch and pan fry in veg/neutral oil, very shallow, and it hits the spot. I add sauce concoction of my choice, (one tub generally counts for two servings for me 😝), and I love my sambal oelek or fresh chili garlic sauce dollop to finish it off... Of course with steamed rice. So yummy 😋

That looks so good! You know now there are brands that make vegan fish sauce! I've tried several and they taste really good. I love using tofu puffs too, they absorb the curry really well. There are other meat substitutes that work well in curries. Thank you for this recipe, great idea to use miso and spinach with store-bought curry paste, I'm definitely going to try. Hope you veganize more recipes!

Hey! I have a stupid question. Is there any difference between a crustacean allergy and a shellfish allergy? (I have never ever seen or heard the phrase “crustacean allergy” before.)

@@deadfr0g "I have a stupid question. " A question is never stupid! "Is there any difference between a crustacean allergy and a shellfish allergy? " No shellfish is a dumbed down term used so americans can understand (theres no fish in the group). Shellfish also can refer to mollusks/bivalves which also are not fish and also dont have "shells". Tho being allergic to this group is a lot rarer!

I just used Italian basil. No thai basil where I live, and Italian basil is also green and smell very nice. Same goes to the taste I love the taste of it aspecially when it is crushed inside that pounding mortar.

I made this with bamboo shoots, baby corn, zucchini, rockfish and red pepper and a couple handfuls of spinach and basil tossed in off the heat. I “grated” the shiitakes in a coffee grinder. Best curry I’ve ever had.

The best vegan replacement for soy sauce in many of Pailin's recipes is the Maggi brand "seasoning" sauce. It is available in many Asian groceries as well as some other stores like Publix and some Wal-Mart locations.

Hey, I made this curry yesterday and it was really good! But I didn't use the dried Shiitake because on the package was written (in german, but I bought it in an asian store), that I should leave them in water in a cold place for 1 hour and than cook them for 15 minutes. And I should wash my hands, when I touched them. So I decided not to use it. I put also a little peanut butter in it. The best new thing was, that the reduced coconut milk made the sauce so creamy like in the restaurant 🤗 The thai curry leaves were also very tasty! 🎉

Hmmmmmmm... I'm not a fan of tofu and I've never seen a winter melon, but I think I need to try this someday anyway. And in future I will definitely keep the spinach trick in mind for more appetizing color! I love shiitake mushroom. But here a warning. For some reason in my middle 40 became allergic to it. Broke out in hive and itching. Anyone can become allergic to any food at any time. Happy cooking ❤
