Going to make this for Thanksgiving. Can I substitute chickpea flour for the whole wheat? My understanding is that chickpea can make the seitan a little more tender? Thanks. Blessings to you and Larry.

Thank you for watching, Jill. The cashews will make the turkey breasts tender. It is already very tender vegan turkey breasts with whole wheat flour. I will recommend you to try with the original recipe for the successful recipe. God bless you!
