We love making Christmas dinner for our whole family and a lot of them wonder what we'll eat when they visit. They're always pleasantly surprised to find an big delicious wellington on the middle of the table and they're even more surprised at how much easier and faster it is to cook than a turkey.
This wellington is packed with flavour and is achievable at any skill level, all you need is a frying pan, a knife and an oven. We'd love to see a photo if you make it this christmas on our instagram.

What a great way to celebrate Christmas for vegans, vegetarians and meat-eaters alike! What is not to love about those flavours, and it looks beautiful. It's hard to believe it takes such a short amount of time to cook - I suppose the thing is the layering of all those flavours. I have an air fryer rather than an oven, so I might have to adapt mine and make 3-4 mini-Wellingtons, but I'm definitely going to try this at some point soon. Thank you, guys - you can restore so well a bit of necessary inspiration when the vegan vibe is flagging and I'm starting to need fresh flavours.

I don't enjoy mushrooms either, and was told several years ago that if you have compromised gut health you shouldn't eat them. I did at the time, so substituted cauliflower for any recipe that called for mushrooms... I now use cauliflower daily and it's worked in every recipe I've used it as a substitute for 😍 I can't wait to try this one!
