Vegatarian Yam Rice - using the Tefal RK5001 Rice Cooker
Vegetarian Yam Rice
Ingredients
200gm yam, cubed
1 hard tofu, cubed
2 cups white rice
30gm ground nuts / peanuts
4 button mushrooms sliced
4 dried shitake mushrooms, soaked sliced
4 long beans, cut into small pieces (optional)
1 onion/4 shallots sliced
1 clove garlic
2 Tbs soy sauce
Vegetable oil
Preparation
1. Heat 4Tbs oil in wok, fry the groundnuts, remove
2. Fry the sliced onions/shallots, remove
3. Fry the tofu, remove
3a. Fry the long beans, remove
Season with salt all the above
4. Fry the Yam until golden brown
5. Add the garlic, then the mushrooms, fry
Season with salt
6. Add the drained rice, fry
7. Add 2 Tbs light soy sauce and fry.
8. Remove rice into rice cooker, and add 1.5 times amount of water to original rice
9. Cook the rice
10. When the rice is cooked, open, and fluff up the rice
11. Add in all the condiments and mix well.
12. Serve hot with chili sauce or sliced red chili.
