Vahchef, First of all, i'd like to let you know that I've recently begun cooking and your teachings inspire me. Thank You so much. I tried this recipe today and ensured that there was literally NO water in the vegetables (which made the mixing easier). I used chopped almonds instead of cashew nuts and added mustard seeds and for the coating, i used egg mixed with a little water and fried this in HOT oil. Vah cutlets Vah !!! my my, this turned out to be an awesome crispy starter :) ..

i watch only vahrehvah for cooking tips. great food instructions! since you asked to share, i will share my new way of cutlet innovation. smash boiled potatoes, put some salt, put grated or grinded carrot peas plain didnt boil, add karipatha coriander nicely chopped, mint nicely chopped, salt, pepper. pour 3 tablespoons of oil on iron pan, put these patties on it in low flame for half an hour. we get tasty healthy cutlet. we can add soya chunk too for protein content.

There are popular shops in Chandigarh which have specialized in deep fried items like pakoras. Their trick is to deep fry the lots till half done and keep them aside. Those won't go bad for good 5-6 hours or more in winter time. When the customers place the order, they weigh the portion and fry it again. Often they cut the pakoras in half. This way they can serve it quickly. The same double frying technique can be used to cutlets too if we are expecting many guests in the evening.
