Vegetable Medley Casserole
16 ounces shredded Swiss cheese
3 carrots sliced thin
4 zucchini, sliced thin
4 yellow squash, sliced thin
1 bell pepper, sliced thin
1 large red onion, sliced thin
cherry tomatoes sliced in half
Frozen extra fine green beans (from Aldi) or 1 - 15.5 oz. can green beans drained
New Orleans Spice (garlic, salt, paprika, dehydrated onion and red pepper, and other)
Bake at 350 degrees covered with foil for one to 1 1/2 hours.
This freezes very well. Cook before freezing and just remember to thaw in the microwave on defrost for best results.
Many other vegetables can be used, I especially like to add fresh mushrooms when I have them on hand. This also makes a great marinated vegetable dish just leave out the cheese and marinate overnight using a bottle of Italian salad dressing. Either way this is a wonderfully healthy side dish for any occasion.
