We call it "guabine"( wah-bean) in Trinidad. We use live sardines or dead bait on a float most times to catch them. Evening into the night is the best time to catch them though. I dont think we have Pacu here as far as i know

PACU definitely eat fish I had a few in an aquarium and they ate only live goldfish, would never eat any fruit of vegetables I put in the tank.
