When it was time to go to the grocery store I always cleaned out the fridge to make a soup like this and when I was growing up my Mother did the same thing. The house smelled wonderful.

Thank you 😊 Vegetable Beef Soup Dessert First Andrea Twyford 1 pound ground beef 1 medium yellow onion 1 TBS garlic, minced 3 pounds gold potatoes 4 carrots ½ medium sized head green cabbage, chopped 15 ounce corn frozen or canned 1 14 ½ ounce can green beans 1 28 ounce can crushed tomatoes 4 cups hot water 1 TBS plus 1 tsp beef base 2 tsp salt to taste 2 tsp Course ground black pepper 2 tsp Garlic powder 2 tsp Onion powder 2 cups hot water Directions: Using a 6-quart crockpot turn on high. Clean and chop the veggies, potatoes can be quartered, some pieces might need another chop. Carrots slice in approximately ¼-½ inch thick slices. Onions should get a medium dice. Drain the liquid off the canned green beans and the same if you use canned corn. Using a large sauté pan over medium heat, brown the ground beef stirring to crumble it up. When it is brown add in the diced yellow onion garlic, salt, pepper, onion powder, and garlic powder stir you can turn off the heat at this point. Add the beef mixture to the crock pot and the beef stock. Add in the corn, green beans, crushed tomatoes, carrots, and potatoes. Add 2 cups hot water. Cover and cook for 1 hour on high then turn down on low. Give a good stir to mix everything, cover and turn the heat down to low and let simmer for 4 hours. Add the cabbage and cook one more hour. Taste, you may need to add more salt depending on your personal taste.

Thank you 😊 yes you can cook it on the stove top. Bring it up to a simmer, then turn it down on low and cover with a lid. You can speed up the process by cooking it between medium and low. Just check it the potatoes and carrots for doneness.

@GayleDugger-j9h thanks for watching! Those are the seasonings I typically use. However, if you have a favorite, you could certainly use it. If you like spicy, you could add chili seasoning.

What setting did you use high or low for the 6 hours of cooking? I’m going to try this but half the recipe because it’s just me. Thanks for sharing. I definitely like the beef stock no meat. I’m going to try that

I use lots cauliflower and broccoli celery carrots mushrooms . Lots onion , kale . Spinach , cabbage, Fresh garlic ! No potatoes ! 😏you can speed it up a little ! Too slow 😢
