If you were gonna grind all of that would you trim out much more or just cube it out and grind? I find myself trimming so much and feel like I’m going overboard. Takes me about 45 mins per hind quarter. The deer up where I live are big, dressing out at 180 often but I still feel like I spend too much time. A ground venison prep video would actually be amazing.

Yeah unlike beef get all that white tallow off, and as much silver skin as possible. Definitely time consuming, but the results r worth the extra time it takes.

Excellent brother. I always tend to break them down while skinning. It allows you to portion easier pack the meat for freezing better etc. All about the muscle groups. Great video guys

I learned this when I was around 11 years old at my Grandpa's grocery store. He processed deer in a building around the back. As a reference, he always said "Follow the Cut Me Here Lines". Works & you can see the gentleman doing the same

I come from a family of butchers, like 5 generations. Well I'm in my mid 30s an just recently moved back home an of course wanted to learn the craft. Been doing it for 3 years now and I've become pretty good an proficient. But there's definitely levels to it like anything else. My uncles can make me look like the rookie I really am if they wanted. There's so many little tricks an places you can cut to make the process easier an I'm still constantly learning everytime I pick those knives up. But to answer your question if your someone like me an have access to hundreds of deer a year an prob 50 cows+ even more pigs you can get good pretty quickly. If you're someone just cutting up 1 or 2 deer a year it may take you 3-5 years to really get good at it and efficient.

That sirloin is so good on the grill or smoker. I take and tenderize it with a mallet until it’s all about 1/2-3/4 inches ,season , smoke it until 115 and then sear it. It’s so good

I'm a professional hunter and have butchered many deer and gazelle. In 35 years, I've never seen anyone as efficient as this guy.
