Thank you for this very useful tutorial. I’m going to try both whitetail and bull elk. Do you recommend velveting at all?

Thank you Sarah! You might try velveting, although axis deer if usually very tender and tenderizing with a mallet does the job. But it might help with elk and whitetail. I did use a brine for wild sheep and goat, especially for goat, and it worked out very well.

I thought the sauce was: soy sauce, ketchup and worscestershire. But I'm sure your sauce is tasty.

You can add worscestershire, that would taste good. Some people add lime juice, honey, etc. The main thing is to have an equal proportion of sweet, sour and salty flavor. Thanks for watching!!!
