Super recipe 👌. One suggestion though about your kadhai. I got a 24". Kadhai. Weighs 2.3kg!!! That's lot of steel. But it takes a while to get the ingredients heated due to the thickness. Maybe a sandwich bottom with a copper layer can improve heat conduction?

Kattarikkai is really king of all veggies.😍 Other than dessert, it is so versatile that it can be made into anything...apppetizer to main course...veg or non veg....dry or gravy....side dish or main dish...sweet/sour or spicy...Indian or worldwide cuisine. Even in India the brinjal recipes are so varied and mouthwatering that someone really need to come up with recipe book for just regional brinjal dishes. I do not know if anyone has come up with dessert recipe too. Please let me know if so.
