The gum taunt isn't rare, though you can only use it once per mission. It's unlocked by performing well in Nero's epilogue enemy encounter (killing the Hell Judecca), and the inputs are the same as the EX Taunt, except that you also need to press the lock-on button (iirc).

I know someone else already said it but it's not a rare taunt, it's an ability you get on Nero. You can do it on command just like any other move. It heals you for a small amount. I don't know how you get it ability but assuming you've beaten the game enough times, you probably already have it and just never noticed. I was scrolling through Nero's moves one day and found it. That level break you did with Vergil though was really cool.
