Ashens gets on my sodding nerves. He's so smug and insincere. You know like Harry Enfield's DJs? It's like he seems obliged to make a joke every 1.5 seconds, except he can't actually think of any. Every moment is sort-of-joke followed by failed joke followed by weak attempt at levity. Just let it go, man. Let it come to you naturally. But he doesn't, so his videos are desperate and unfunny. The bloke claims to be a psychiatrist, which really makes me worry for his poor patients.

Many years ago, my wife and I bought a large block of feta cheese at the local warehouse club store. (I think it was Sams Club.) Because we didn't need it right away, it went into the freezer where we forgot about it. About a year later, we found it in the freezer and my wife wanted to throw it away. I refused! Much to my wife's horror, I defrosted it and ate it over the next few weeks with no ill effects. My wife started calling it "scary feta." That stilton most certainly qualifies as "scary stliton." :)

Forces friends used to sware by the full fat red cans of coke. The search and rescue boys used to keep some in the helicopter and drink one when they had been in the water. in case they were in sea where there was sewerage. Also helps if you've got a bit of a head and stomach the next morning, after a heavy night out. The acidity in coke helps get the stomach ph somewhere closer to right, after you've spent a happy hour with your head down the loo.

I think that you wasted some delicious cheese - it being cheese means it was already spoiled, and the strong odor means, as you anticipated, that it had gotten better. That being said, eating cheese is always a good time to have a drink. (I can't speak to Polish vodka, but I dearly love my Irish rye, so I'll have to see if I can sample it here.)

@ThumpertTheFascistCottontail7 жыл бұрын
Nokomarie How do you know what urine tastes like? :D
@0LoneTech7 жыл бұрын
This cheese was still in a controlled environment though; refrigerated and sealed. The nice thing about cheeses with their own mold culture is that they tend to outcompete whatever culture tries to invade.
@MrSwanley7 жыл бұрын
I'm pretty sure that stuff about controlled environment is not true. Yes, modern commercial cheeses may be more controlled, but that's mostly in order to maintain consistency: and ok, a business also has to worry about lawsuits if someone gets sick. However the traditional way of making any similar cheese was simply to let it be attacked by whatever random pathogens happens to be passing by (ditto yogurt, ditto sourbread etc). The fungus gets the outer shell and you get the protected inner bit. Your nose tells you if the latter is edible. Trust your nose - in part that's why you have one. Of course over time it came to be known that cheeses from certain regions had a particularly attractive taste, and that's the main reason we identify and culture those particular bacterial/fungal strains. People over the last century were real pantywaists when it came to bacteria and fungus. Happily that does seem to be changing as people learn that not every germ is the black plague.

Watching Bagpuss I'm put off filth and germs in general. Did they never clean that shop? Was _everything_ filthy in the 1970s? Everyone's hair looked greasy, their skin sweaty, their clothes horrible and greasy. Just looks like a filthy, smelly, unhygeinic decade. No wonder everyone in the '80s looked so fresh and well-groomed. Kylie, Jason, Rick Astley, New Kids On The Block, all looked like they'd stepped straight out of the shower, on their way to another shower. Please excuse the lame cultural references, I was a kid at the time, so it's them or Dangermouse. Or Button Moon I suppose, whose bodies were literally bottles of bleach and washing up liquid. Bet that'd get them banned nowadays, probably a good idea.

Moldy cheese doesn't _go off_ unless it's attacked by mold that is poisonous or toxic. The best before date is there to sell the product with taste that was originally intended, otherwise it might be too strong for some people to eat. Good tip is to use this very strong cheese as a condiment for things like cheese sauce - the stronger the cheese, the more umami flavour it has, which is pretty good. Cheers.

How topical. I just finished off some out-of-date St.-Marcellin. It was only one month out of date, though. It still wasn't ripe, either - I could cut it rather than having to spoon it out of the little terracotta dish as they do in France. Maybe I'll have to not keep it in the fridge next time... I've always said of these short dates that they have on cheese: it's been sitting in a cave somewhere for the last umpteen months - why do I need to eat it within 3 days?

Big Clive thank your for your videos. You have my housemates asking why I'm laughing whilst taking a poo. But seriously you make the internet and peoples lives a little better with your videos, thank you man. Ps I'm drunk.

Last night I had some Philadelphia Cream Cheese that had been in my fridge for a year, unopened and 6 months past its date. I used it to cook lasagna. It was fine and I am fine. However, other Philadelphia packs, opened, have gone off in days. Parmigiano keeps forever - it's at least 2 years old when you buy it. Two years ago, my friend Vik and I started making our own cheeses. A little fiddly and finickety at first but worth the effort once we got the hang of it.

Admittedly I have also given eaten cheese that was probably a bit old. Although only touched the center and basically did what you did and threw it out quickly. I don't recall getting sick from it though.

Speaking of aged dairy products, have you heard of the butter that they occasionally find buried in peat bogs? Thousands of years old, and it is still perfectly edible, if a bit cheesy. I'd quite like to try some of that one day.

I like to buy mature or extra mature from the reduced rack, after about 6 months it's ready to open. Salt crystals form on and in the cheese which makes it even better. The way I see it, cheese used to be a way of preserving milk so you can't really go wrong.

At Christmas you can buy small waxed truckles of cheese in all the supermarkets. I particularly like the Wensleydale with ginger, so I bought a few. They're covered in white wax or as I will now refer to it as fridge camouflage. It sat there (hiding in plain site) for 14months. The anticlimactic end to this story, is that even though it was out of date by a full year when i ate it. It was entirely unchanged. Wax is pretty good at it's job!

I recently ate some goat's cheese that was over a month after the use-by date. It was very soft (easily spreadable), delicious and flavoursome. I would generally eat Stilton or any hard cheese of any age. However, I won't eat it if it gets up and runs away. Toasted Camembert smells rank, but is quite delicious.

Given that most cheese matures for years it is amazing how it goes out of date in a few weeks.

The bit about not being able to overfill a drink when Scottish. reminded me of that episode of Garth Marenghis DarkPlace, when he says that "The Scotch" want what the English have, one of the listed things being sobriety.

Not news to me Clive, I did some wiring work for a chap who is now a millionaire from (amongst other things) selling out of date cheese at town markets, How did he do it?, Re- cutting, Cut off the outside and wrapping with a new date. J. ( I have one other anecdote about him, but not for a public platform!)

Last time I was on a cruise ship, the people drinking lots of vodka didn't show up to breakfast at all. And some of them had thrown up most of what they had eaten. I don't think anyone got food poisoning though.

it depends on the companies but most companies allow drinking on containers if your on watch you can be breathalyzed randomly.

Who was the music hall comedian who quipped "Take your feet off the table father, and give the cheese a chance"? I forget. In making the famous film The African Queen it was said that everyone got very ill during the Botswana filming, because a filter was damaged or missing from the pump that supplied the river water, which was full of hippo poo. But director John Huston and actor Humphrey Bogart apparently stayed OK, because instead of drinking the water, they were only drinking bottles of spirits.

Last dates on cheese is primarily determined on the way the taste changes over time, nothing to do with edibility.

Clive, You're so classy with your plastic shot glass! 😉 Considering nearly all cheese is left to mature in a cool place to develop its flavour I doubt there's much likelihood of doing any serious harm. The fact that the cheese was sealed in its original packaging should minimise the risk of contamination from harmful bacteria as the lacto-bacillae will likely reduce, or prevent, the propagation of any such nasties. After all, cheese is one of the ways that we've learnt to naturally preserve milk and ensure that it will continue to be edible long past it would have gone sour.

Extra mature Cheddar has been sat on a shelf for 15 months before It goes on sale anyway! Nothing wrong with letting it mature for a few more. I'm one of those people who enjoys very stiff drinks on cruise ships... The last time I did a trans-Atlantic on Queen Mary 2 I think I was in various stages of drunkenness for the entire voyage!

Alcohol against food poisoning seems like a good home remedy in my book! I have some experience in using a vodka as an anti-bacterial/mold agent when I juiced some rhubarb. That worked quite good even in small concentrations.

Oh Clive... I once had undercooked chicken off the BBQ 12 hours before a flight from Auckland NZ to Calgary Canada. Let's say the moment I walked through the door on the plane I was producing all sorts of unpleasant liquids from both ends of my body. To make things worse the flight was delayed and I kept missing connections... So 23 hours on planes and airports with that level of food poisoning was not good! I even had to run to the loo 3 times at Canadian customs... I bet that looked suspicious
