1,蘿蔔乾(菜脯)浸水20分鐘以上

材料:
蘿蔔乾(菜脯)1斤半
(1千克)
蝦米5湯匙
蒜頭3個
辣椒仔6隻
調味料:
乾辣椒粉2湯匙
冰糖1大粒
雞粉1湯匙
油150毫升(約6湯匙)
1. 蘿蔔乾(菜脯)浸20分以上洗淨。
2. 菜脯要用攪拌機打碎。
3. 用白鑊烘乾,令菜脯更出味,然後上碟。
4. 用油炒香蒜蓉。
5. 加入辣椒仔及乾辣椒。
6. 轉細火,然後加入蝦米,慢慢兜炒。
7. 加入冰糖。
8. 將菜脯回鑊,加入雞粉,不停兜炒,炒至冰糖完全溶解,然後上碟。
9. 攤凍之後,可以入樽。

Dried radish 1 1/2 catty
(1 kg)
Dried sea 5 tbsp
Garlic 3 Nos.
Red chili 6 Nos
Seasoning:
Dried chili 2 tbsp
powder
Rock sugar 1 big cube
Chicken powder 1 tbsp
Oil 150ml (around 6 tbsp)
1. Soak the dried radish for 20 minutes, rinse thoroughly.
2. Blend the dried radish thoroughly.
3. Put the blended radish into the wok to dry thoroughly and release the smell of it, ready to serve.
4. Fry the garlic thoroughly with oil.
5. Add red chili and dried chili powder.
6. Change to low flame, add dried sea shrimps, stir slowly
7. Add into rock sugar.
8. Put the dried radish into the wok, add chicken powder, stir continuously until the rock sugar melted completely, ready to serve.
9. Save the cooked radish into a glass container when it has been totally cooled down.
