Just made this today. I didn’t use the self rising flour as I’m not sure how many recipes call for it. Instead I used the SKF 2.0 and added 1.5 tablespoons of baking powder to the recipe. Wish you could post pictures here. It rose beautifully and tasted great! Will definitely be making this again. I did leave out the nuts though.

I miss banana bread too! I have been using your Victorias keto flour for many non-keto recipes with great success. Im looking forward to apple season and making my apple cake. Hubby and I are so grateful for you and your recipes. His A1C has decreased by 50%. ❤

Super GOOD, Victoria!! Wow, yummy! I doubled the batch, made it in 9x13, and baked it for about 40 minutes. I just made a few changes... I don't have the self-rising flour, so I added 1 tablespoon of baking powder. I added nutmeg, apple cider vinegar, walnuts, and some chocolate chips. I didn't make the glaze, but man, if you did a cream cheese frosting with this, it would be dangerous.

I use Olive Nation banana extract and I find that it imparts a good, non-candy banana flavor to my bread.

I can’t use bananas either due to my diabetes. I make my mom’s banana bread recipe and I always end up eating some too, which I shouldn’t be doing. Have you made this recipe? If so how much banana flavoring have you used? I believe I have the Olive Nation banana flavoring as well, but haven’t used it yet.

If you want or need or feel banana is too much carb.... Banana bakery emulsion of 1 tsp or more will give you a rich banana flavor.

Sister in Christ, Victoria, since bananas are so high in sugar, I'm surprised you didn't use banana extract instead. Could the texture, etc., be produced by adding banana extract to your zucchini bread recipe? But what would you omit so it tastes like banana bread instead of zucchini bread?? Blessings! (P.S. I've made your Perfect Keto flour -- amazing! Does it hold up to yeast for that yeasty taste of bread, instead of baking powder quick breads?)

I've made my own low carb banana bread using cream cheese to replace the moisture you would get from bananas, for dairy free, I would use kite hill brand cream cheese, then of course add banana extract
