I’ve made traditional English muffins. They are a batter vs dough. Also they as someone said already, yeast and baking powder. They are cooked on cornmeal so not to stick to cast iron. Also they are very moist inside and you toast them almost to give the final touch to cooking. Plus you fork split them to give them then they nooks and crannies. If it is a batter and softer inside your fork splitting cause all the nooks and crannies that cradles all the butter. So when you bite into it the very top is crunchy from toasting, then chewy in the center and a crunchy outside. It’s this lovely mixture of textures. I use to make them yrs ago all the time and they’re fun yet tricky to make. But so worth the effort once you get that right texture and flavor.

You'll get bigger bubbles if you add baking powder too, traditional recipe uses both that and yeast

English muffins are to be toasted in the toaster after they are fried and cooled! Makes inside crunchy. For egg sandwiches probably not toasted. Used for eggs Benedict. I love them toasted with butter and peanut butter ☺️ will make these 👍👍❤️

My mom always made us mini pizzas on the open one side of the English muffin. I like them toasted if using for any jam or sandwich meat

To answer your question about egg size...yes a new layer will lay a smaller egg as they they get the kinks worked out of their laying process.

Yep! Mine lay small then get bigger. I do have a girl who lays medium eggs always due to her breed.

English muffins are generally split with a fork to preserve the nooks and crannies so you might try that and see if the texture is better. Also they're better if toasted. It's cornmeal that's used on the outside of English muffins.

​@sherrymorgan74 instead of slicing with a knife, you insert the prongs of your fork through the muffin to "cut" it so you can pull it apart. Idk if I'm making any sense 😂 I can see in my head what I'm trying to explain, but it's hard to articulate it.

I think a little coconut flour and/or psyllium husk powder to get that granular feel of the cornmeal. I have used coconut flour on a fathead pizza dough peel. I would also fork split and toast it! :)

I made a pizza for my hubby using your 2.0 flour in a fathead dough in place of almond flour (yours already has AF). I was so surprised about the texture of the crust (which I prebaked for 15-20 minutes). It reminded me of a version of pie crust or the unsweet crust in date squares.... The texture was perfect not crumbly. I have been thinking about how this can be applied in various foods.

I'm bet if you put some frozen shredded butter in there you could get some big holes like in regular English muffins. Indigo Nili does this with her egg white bread.... Maybe....

That sounds like a great idea! They are typically made with a lot of butter. I actually went on Ebay and got an old Salad Shooter so that I could shred butter like Nili does. I've been in the mood for English muffins... so this is great timing!

One of my favorite ways to eat English muffins is to make them into Monte Cristo sandwiches. I do ham, provolone cheese, and some type of jelly. Then you toast it to get the cheese melty. They're so good!

When I used to eat regular English muffins I always cut them in half and toasted them, put butter on them, and ate them that way. So good!

I looked it up and the coating for traditional English muffins is 'farina', a grain that has 24 net grams per CUP. It might be okay to mix a little of that in with the bamboo fiber and butter powder for a traditional feel. I'm not a particular fan of English muffins, but your video has me wanting to make them and have a taste - Thank you!

Can use English muffins as a substitute for bagels and prepare like bagels & Lox. Smear with cream cheese and top with paper thin sliced Smoked salmon, capers, red onion slivers …sooooo good!

Eat with butter and orange marmalade. Or butter and any preserves or jams. English muffins pizzas are great! Fresh tomato, garlic salt, few leaves fresh basil and mozzarella or Swiss cheese. Of course, eggs Benedict is classic and delicious!!

Yes, if they're large type hens, the new layers do lay smaller eggs early on egg size will increase ... may your eggs increase in to size soon.

Thank you! I have missed English muffins more than any other bread product. I like to split them, toast them and then the sky is the limit. Sandwiches, egg mcmuffins, eggs benedict or just slathered with jelly or peanut butter. Great also to dip in soups...but for me they always have to be toasted.

In Australia we buy these in a bread packet, then toast them and split them to have savoury filling or sweet filling. So , I will lightly cook them, freeze them and then toast them. It’s a great recipe for me to try as I miss them. Love your flour as I can have bread on keto.

I want to try these. I think I'll try these tweaks: Allulose would help keep it moister, and baking powder would help with opening the crumb. I love experimenting.

Bless you, you just described an English Muffin. They look just like them too except they generally have more nooks and crannies on the inside; the fact that these don't only mean I won't have as much butter to drown in..🤣 The other great thing to do with them is to make Eggs Benedict with eggs (Captain Obvious here), Canadian Bacon and Hollondaise sauce. My husband's gonna love that. I'll have to watch him eat the egg though, boo. BTW I've been trying to make VKF without the Egg White because I'm incredibly allergic and have found that Collagen powder weighs the same with the same amount of protein. So far I've only made the pizza recipe with it for a family pizza party and my pizza came out just as well as everyone else's as far as I could tell. It mixed the same and cooked up the same. I've got my fingers crossed for all the other egg free recipes or recipes I can switch out just one egg. Thanks for all you do. You are such an inspiration.

Usually English muffins have lots of holes (kernels) and the outside some use corn meal. Still looks good.

​@@lauriemclaughlin6589​it's actually a very slow fermentation that creates the nooks and crannies (12-18 hours). You can fork split these and won't have the typical nooks and crannies.

A few minutes under the broiler or in a toaster then… Peanut butter toast, open-faced tuna melt, just butter. I usually treat mine, more or less, like I would a bagel.

I think most people toast their English Muffins before making a sandwich, or placing jelly. (Maybe you did toast the EMs and I missed it.) Great recipe can't wait to make my own English muffins. 😀

I was about to make some dream biscuits but decided to make these instead. Well, it is not a traditional english muffin but in my opinion these are a great replacement. Sort of a cross between a biscuit and muffin. I didn't have butter powder so I used buttermilk powder. It worked great 👍I only made a half batch and should of cut the egg in half as the batter was a little too wet. I just added some extra VKK flour to make a handleable dough. It didn't appear to hurt a thing. I ate a half of one with just butter then I toasted another one and ate those with jam and butter. Very tasty 😋 Tomorrow for breakfast I am gonna make an egg mcmuffin. Pretty sure it will be so good 🙂

Your hens WILL lay bigger eggs as they mature. Mine started off small, sometimes you get a giant egg (2 yolks) sometimes you get a tiny egg the size of a quail egg. She is not old enough, give them time.

I know you tire of answering the same questions over and over and over, but i purchased some Konsyl Daily Psyllium Fiber. According to the ingredients list, it is simply powdered Psyllium husks. I'm so eager to try these as English muffins are my absolute favorite. I'm thinking since you grind your husks with a coffee grinder, it might possibly come out with more of a coarse texture and do you think i could swap these? I have all the ingredients you use waiting on Amazon to be purchased to see if i should use what i've got. Thank you so much for your time and i hope you enjoy your Easter weekend! Have you tried dropping the batter into a well-oiled pan and frying them into shape? That may improve the taste and texture of the English muffins.

Lol, I always have eaten them as a biscuit or a bun for an egg sandwich. But when you said you didn't know what to do with it, I suddenly thought, what is the correct way to eat them. I don't know either 🙂 Guess it doesn't matter!

Is it insulin powder or inulin fiber? If I use instant yeast is that ingredient still needed since it doesn’t need to be proofed?

It's such a small amount, it's probably not even a cheat. And that way you don't have to get a crazy ingredient like butter powder. I will do it with cornmeal.
