I would definitely love to see y'all stream any of the Donkey Kong games! Also maybe something like Spyro or Crash Bandicoot? Honestly there are so many games that could be fun with shared controls. Another suggestion: I'm sure you need a break from Mario, but later on there's a romhack called Mario 64 Chaos Edition which is really mindbending in a fun way. I think it would be way too challenging with shared controls, but if you're interested maybe you could pass & play, or one of you could solo stream?

Someone else said DOOM, which sounds like it would be fun, but Griffin's recommendation for something like Dark Souls would definitely be cool (someone moves, someone rolls, someone attacks for example). idk if it'd be too normal but Sekiro with one person on movement, one on block, and one on attack could be interesting as well.

there's a game called Widget on Snes where you play a shapeshifting alien, its basically a platformer with enemies sprinkled around and maybe some boss battles i cant remember. The forms the alien takes have different powers and im sure it would be a nightmare to play with 3 people but it would make at least 1 really funny stream

How about Armoured Core 6 next? No no come back hear me out! One brother on joysticks (move & aim), one on triggers & bumpers (shoot guns) and one on buttons & d-pad (dodge, repair & jump). No idea if the tech exists to share a pad like that but the game is already designed for people with 4 thumbs so it could surely only improve the experience. Plus you could build robits together! Sticks brother chooses legs, trigger brother chooses weapons and button brother chooses internals. Also, related, V.II Snail can bite my shiny metal ass...

they were playing on something else before. parsec removed the input lag, which was so jarring that it made their inputs too fast and ruined a couple runs at first. it looks like the lag here is more frame drop than input lag.
