Banh Duc is a famous brunch dish in Southwestern of Vietnam. This cake is made from only three ingredients which are rice flour, coconut milk, and water. The ratio of the ingredients is 1 cup rice flour, 2 cups of coconut milk and 3 cups of water. There are different types of Banh Duc, and we can eat this cake with a sweet or savory topping. I made the savory topping for my Banh Duc, and it is a combination of minced pork, jicama, and dried shrimp. With this Savory Banh Duc, I made a sweet and sour fish sauce with some pickled radish to balance with the creaminess of the cake. Banh Duc is best right after steamed and cooled down. The cake melted in my mouth. Caution, highly addictive.
