@@v2pham oh, the pickled lemon duck soup is basically the whole duck is simmered in the pot with pickled lemon to make duck soup that you can order in most Chinese restaurants in Cambodia. Thank for the reply, so at least two months. OK, duck soup has to wait until early July.

Hello! This is a follow up with additional Qs. After the one-month in the sun, do I bring the jar inside or just leave it out in the sun? And once the first batch is used up, do I re-use the brine and just add more lemons or do I start over following your recipe? Your response to one of the comments that you have some lemons that are 3+ years, are those from the original batch? Thank you!

You can bring it in and leave it somewhere mostly sunny like a window sill or continue to leave it outside. I prefer direct sunlight outside. You can reuse the brine if there's enough to cover the new lemons. Yes, they were from the original batch 🙂 The longer, the better 😉

Since it doesn't need to be exact, I use just 1 cup of Redmond real salt, it wasn't dissolved completely, I just pour in, as time goes by the saltiness will mellow. I keep one 5 gallon jar to use year round. But I like to salt kam quats much better than lemons

I just watched another clip that showed a different way to make pickled lemon. After washing and drying the lemon, she packed them tightly in a jar and sprinkled kosher salt on the lemon in the jar, put the lid on the jar and left them out in the sun for three months. My question is will the pickled lemon, your way and hers, come out tasting pretty much the same? Thank you.

With salt only, pickled lemon will be saltier. But I like this recipe more as I love the finished brine.

As long as the lemons get some direct sunlight throughout the day then you're good. It prevents mold and ferments better.

Alright, I am very brave culinarily... but this might be my limit. Will just have to wait until I go to someone's house and they offer me this (and I can't refuse because it would be impolite). I actually can't imagine this tasting pleasant... then again I did work up the bravery to have century egg on congee and that was fine.

I'm looking at this because there is a Vietnamese restaurant I go to that serves it and I like it so much I want to make it at home. If there is a Vietnamese restaurant near you they likely have it on the menu, you should try it. It's really good.
