Vietnamese Savory Crepe // Bánh Xèo
Makes 8 10” crepes
Ingredients:
1 cup rice flour
1/2 cup corn starch
1 teaspoon salt
1/4 teaspoon turmeric
2 cups chilled carbonated water
1/4 cup coconut milk
1/2 cup chopped green onions
1 large onion, thinly sliced
Neutral oil for cooking
Salt and black pepper to taste
2 lbs shrimp, peeled and deveined
1 lb pork belly, thinly sliced
Mung bean sprouts
For the Dipping Sauce:
1 quart water
1 cup sugar
2 tablespoons salt
1/2 teaspoon MSG (optional)
4 tablespoons fish sauce
1 Thai chili, minced
2 garlic cloves, minced
1.5 tablespoons lime juice
For Serving:
Lettuce leaves
Fresh mint leaves
Perilla leaves
Cilantro leaves
Sliced cucumber
Pickled carrots & daikon
Instructions:
1. In a bowl, whisk together rice flour, cornstarch, turmeric powder, carbonated water, coconut milk, and salt until smooth. Stir in chopped green onions. Let the batter rest for about 30 minutes.
2. Season the shrimp and pork belly slices with salt and black pepper.
3. Heat a non-stick skillet over high heat. Add a small amount of oil. Sauté shrimp and pork slices Add sliced onion
4. Pour a ladleful of batter over the fillings, tilting the pan to spread it thinly/evenly. Cook until the edges start to lift from the pan and turn crispy, about 2-3 minutes.
5. Add a handful of bean sprouts to one half of the bánh xèo, cover with a lid, and steam until wilted. Remove the lid then fold the other half over like an omelet. Cook for another minute.
6. Remove from the pan and keep warm. Repeat with the remaining batter and fillings.
7. For the dipping sauce, combine water, sugar, salt, and MSG in a small saucepot over high heat. Once it boils, turn off the heat, add fish sauce, and stir. Transfer to a separate bowl and allow to chill. When ready to serve, add minced garlic, minced Thai chilies, and lime juice. Adjust the seasoning to taste.
8. Serve the bánh xèo hot with the dipping sauce and fresh greens on the side.

I had a Vietnamese crepe one time in my entire life in a Houston night club. I just happened to walk in, saw that the place was crowded with other Vietnamese people and some had ordered food with their drinks so I knew it must be good and authentic. I had no idea how to read the menu and pointed something out and they served me this. It was delicious but I believe mine had squid in it. Now I want to have it again and can make it at home thanks to you.

Bánh xèo is on the menu at almost every viet restaurant in Australia. Very common. Whether it's any good is another story lol😅

@@dvdnguyenGosh, kinda agree too but for my experience in my area everything is good but the shrimp and meat they put is not enough like they cut the shrimp in half just to look more shrimp! 😅Other than that, I can eat this anytime of the day forever! One day during those tough time, I just randomly saw this in my usual viet restaurant and boy my mood went to 😢 - 😊!!! I will try to make this at home. Thank you for this.

I eat it lazy and it drove my mom crazy. I tear it up and mix it with the greens in a big bowl then drown it in fish sauce. So, basically a Banh Xeo salad. In a more formal setting with more family, I will eat it properly, but at home...it is in a bowl. BUT bonus, I always got the first throw away banh xeo since it always breaks.🤣

I felt like a bit of an outsider at first when I joined my college's Vietnamese Student Association, but it wasn't long until I felt at home. Making banh xeo, pho, and goi cuon together made me feel like a part of the family

You’re absolutely right…only a handful of Vietnamese restaurants make these…so, I make it @ home instead! By far my fave Vietnamese food❤️ It’s perfect🙌🏻-got seafood(shrimp), pork belly, and the different greens (lettuce, mint, etc) #BanhXeo

Yeah, there’s a huge Vietnamese population in New Orleans East. That’s actually where I grew up. It’s the reason why I crave Vietnamese foods every once in awhile too.

That looks good. Most people do not realize that Vietnam was a French colony for a long time and that’s where a lot of Vietnamese food was influenced from French cuisine….such as Pho (from pot au feu), ban mi bread (French baguettes), and the crepes in this video.

I’ve had this many times at a restaurant in Beaverton, OR called tan tan. I’m going to try this recipe because they changed theirs to include pork no substitutions. Thanks! Looks amazing!

I am so fortunate that a Vietnamese restaurant (Pho Saigon Noodle House) I used to live near in Crofton, Maryland made this. I got it all the time and it was sooooo good.

Haven’t had those in a while, but I should! My mouth is watering! Most of the Vietnamese restaurants in my town have this on their menu, but since there’s so many Vietnamese places here in Sacramento, I always have a hard time choosing 😅

If you use the banh xeo mix from the grocery store, you can also use beer for a crispier batter

The mix has fillers that make it never as crispy. I just use pure rice flour with a bit of tumeric powder.

I'm confused....you say to add chilled club soda, but you're actually putting in a bottle of San Pellegrino, which is mineral water. If you want a lighter batter, it's better to add club soda or seltzer.

My favorite. I tried making it at home and failed. It's so expensive at the restaurant too. It's like $15-$20 and some place are greedy with the shrimp/meat. Or sometimes the meats tasted old!!! Thanks for the tips!! I’ll test it out how It went for me.

The first 4 ingredients can be found in a premix banh xeo batter. You can find at any Asian store. Usually in the aisle where you find the tempura mix. We make a lot of banh xeo because it is my sister's favorite.

Use Carbon Steel. It has nonstick properties. But has the additional advantage of giving better color and crisp.
