I have 4 Poblano pepper plants and they are now covered in peppers. I can hardly wait till they are ripe. I am really looking forward to making these with my homegrown peppers. Hi Rossana ! I just made your recipe for Chili Rellenos. It turned out FABULOUS, loved your step by step directions. And did make me so happy. The sauce is, just WOW, delicate and light, flavorful, balanced. I did have much frustration over trying to get the skin off the peppers without tearing them. And they were torn, but I did freeze the stuffed peppers for about 35 minutes before I coated them with the flour, then dipped them in the glorious egg white mixture. ( boy that was messy) Then covered the torn places with more egg white mixture !! My friends were also very happy. I love the soft pillowy texture of the chili relleno. I remember , a long long time ago, in Los Angeles; my Grandmother used to take me to a good Mexican restaurant and this is the way they were. They were not like an eggy omelet, they were light and spongy. But I do have to say, this is a bit of work and I think it is a more advanced recipe. Question : Is this tomato sauce used in other Mexican recipes ? ( Normally I do not want to make Chili Rellenos because I know they are a lot of work, but I was inspired to make it for my friend who is 98 years old and loves them) Glad I found you video's.

@@VillaCocina Made this last night and it was fantastic! My sauce was more pale in color but that was probably because of the terrible Roma tomatoes in the supermarket. (My tomato plants are done for the yesr.) The flavor was delicious and the fried corn tortilla really added a nice flavor. Thank you for sharing your recipe!

Great video, well presented! Between your video and Rick Bayless's most recent Chile Rellanos video, I figured why my peppers had been on the soft side the last few times I've made them (where I never had an issue before). I simply left them covered too long after blistering...Doh! Like you I really prefer the Oaxacan string cheese when making these, so much easier than regular shredded. And your secret for your tomato sauce looks intriguing, I'll have to give it a try! Thanks again!

I just made some chili, and I like to add poblano peppers to them. I love the flavor of poblano peppers. Even though I was cutting them up to put in the chili, I wondered why they were so soft. Now I know. 😉😁😊

These look great! Thanks for showing how to get the seeds out - most videos say "remove the seeds" then don't show how! I would not have thought to use scissors. I've only had them in restaurants, but I would love to try making them. great video!

Cathy S..Buy a pair of ‘kitchen only scissors’ only used in the kitchen for food. Dollar store has Betty Crocker red and white scissors and silicon red spatulas( at least they used to) I have 3 pair of kitchen scissors one strong enough for cutting chicken carcass.💕

I made your tomato sauce but added celery and a Serrano chile to give it more flavor. Chile rellenos are time consuming but worth every bite.
