നല്ല നാടൻ നെത്തോലി അച്ചാർ | Kerala Style Anchovy Fish Pickle

Ingredients
Netholi/ anchovies - 1kg.
Ginger - 2 big piece.
Pepper - 3 teaspoons.
Garlic - 10 cloves.
Salt to taste.
Turmeric powder - 3/4 teaspoons.
Coriander - 2 teaspoons.
Green chilies - 3 nos.
Mustard seeds.
Curry leaves.
Dry chilies.
Chili powder - 3 tablespoons.
Vinegar - 3 tablespoons.
Asafoetida.
Method
1)Grind ginger, dried chilies, pepper, garlic, salt, turmeric powder, and coriander to a fine paste.
2) Marinate the prepared paste to the fish.
3) Fry the fish well in hot oil add curry leaves while frying.
4) Heat a wok with oil, splutter mustard seeds. Add finely chopped ginger, garlic, green chilies, and curry leaves and saute. Add asafoetida, fried fish, chili powder and vinegar, and saute.

നത്തോലി -ഒരു കിലോ
ഇഞ്ചി- 2 വലിയ കഷണം
കുരുമുളക് -3 ടീസ്പൂണ്‍
വെളുത്തുള്ളി -പത്തു കഷണം
ഉപ്പ്
മഞ്ഞള്‍ -മുക്കാല്‍ ടീസ്പൂണ്‍
മല്ലി -രണ്ട് ടീസ്പൂണ്‍
പച്ചമുളക് -മൂന്നെണ്ണം
കടുക്
കറിവേപ്പില
മുളകുപൊടി- 3 ടേബിള്‍സ്പൂണ്‍
വിനാഗിരി-3 ടേബിള്‍ സ്പൂണ്‍
കായം
തയ്യാറാക്കുന്ന വിധം
1) ഇഞ്ചി, വറ്റല്‍മുളക്, കുരുമുളക്, വെളുത്തുള്ളി, ഉപ്പ്, മഞ്ഞള്‍ പൊടി, മല്ലി എന്നിവ നന്നായി അരച്ചെടുക്കുക
2) കഴുകി വൃത്തിയാക്കിയ നത്തോലി യിലേക്ക് അരപ്പ് നന്നായി ചേര്‍ത്തു കൊടുക്കുക (20 മിനിറ്റ് വയ്ക്കുക )
3) ചൂടായ ചട്ടിയിലേക്ക് എണ്ണയൊഴിച്ച് വേപ്പിലയും ചേര്‍ത്ത് നത്തോലി വറുത്തെടുക്കുക
4) അടുപ്പില്‍ ചട്ടി വച്ച് ചൂടാകുമ്പോള്‍ എണ്ണ ഒഴിക്കുക. എണ്ണ ചൂടാവുമ്പോള്‍ കടുക് ഇടുക. ചെറുതായി അരിഞ്ഞ ഇഞ്ചി, വെളുത്തുള്ളി, പച്ചമുളക്, കറിവേപ്പില എന്നിവ ഇടുക. കായം ചേര്‍ക്കുക. മുളകുപൊടിയും വറുത്തുവെച്ച നത്തോലിയും ഇടുക.
വിനാഗിരി ഒഴിച്ച് നന്നായി ഇളക്കിയ ശേഷം ഇറക്കിവെക്കുക
