Just asked my mom yesterday, on how to make the pickled green tomatoes. Pretty much exactly the same. I love them so much. Great on sandwiches! Also, why waste good food. I’ve lost mine many years ago but all memories with them are vivid and full of joy. I miss them so much. Im Calabrese and we make them a little different,we don’t use oil we actually use the vinegar to top up the jars. Both ways are great, just depends if you want them a little more tart.First time I’ve ever seen anyone else make these. Also to add just more flavour we use fennel seed.

I didn’t have parsley so I substituted it with basil. The fragrance of the basil just elevated it for me. I also used apple cider vinegar and white. It turned out so good that I repeated again this year. Enjoy!!

Vincenzo you are so blessed to spend time with Nonna and learn the old ways of preparing and storing food. However a mandolin would keep the slices uniform and allow even salt and vinegar penetration. Adding the garlic and parsley genius. After you consume the tomatoes you can use the oil and garlic to prepare other dishes. The oil mixing with some herbs and vinegar also be used in making the panino or a vinaigrette for a salad using some of the pickles tomatoes in the salad. Maybe adding fresh ripe tomatoes in the salad to complement each other. Hope your baby and your wife are doing well.

I always have alot of Green Tomatoes left on the vines when frost is arriving, so this year I will try pickling them.....My Mom made half-sour pickles years ago but hers were FERMENTED in a big pot and eaten without canning them........I want to make pickles or green tomatoes using vinegar and placed in the refrigerator ........Thanks for the recipe......

Huh! Hadn't thought of that!! This year's weather meant gardens were hit or miss... Many didn't get tomatoes on their plants beause of the crap weather. We were lucky but the lack of sunshine lately means we'll probably harvest before they ripe and the frost sets in... This looks delicious! I'll have to give it a try with halved cherry tomatoes!!

My father, Nonna, Aunt carmella every year while I was growing up they would take one weekend they'd all come to our house and I remember when I turned 13 years old my grandmother said OK it's time for you to help. On Friday night we would peel the eggplant slice them and salt them we also do the tomatoes like thatc usually it was 2 cases of each, then Saturday while they were pressing and getting the eggplant ready to be pressed for a month before they pickled it they would take care of the tomatoes and my job was the five gallon bucket of green Sicilian olives that I had to take and crack with the hammer. My fingers were so sore for a week after that. Then on Sunday they would take the olives and the tomatoes and brine both then on Monday thank God I was at school lol they would jar the tomatoes and the olives in the olive oil with the seasonings, olive oil, garlic, fresh basil and parsley red pepper seeds . We weren't allowed to touch those jars for three months. They would press the eggplant to get all the water out I think it was just at a month then they would take and jar the eggplant and put the same oil and spices and again you didn't touch those eggplants for at least three months. But to me there was never a better sandwich then mortadella, salami, capi ham, and Prosciutto and thin sliced hard provolone. Then the eggplant, tomatoes and arugula. With the olives on the side. OMG I miss those days. My grandmother used to pickle unripe tomatoes in vinegar. They are delicious just on some buttered bread or as part of a salad. It's a great way to use up those unripe crops at the end of Summer which are inedible raw, but become something totally different when pickled or fermented.

We just had a cold snap, and my tomatoes dropped off the plant. They are plum varieties. Would this process work with them? Obviously, I’d cut lengthwise. There’s only a handful now, but more may fall soon. Luckily, summers over, and we had plenty of fresh tomatoes over the year.

I think I can understand your grandmother's Italian quite well. Actually I speak Portuguese, Spanish and I know a little French (reading only), all neo-latin languages. I understand some European languages relatively well because they all have Proto-Indo-European origins. But this one surprised me. My mother spent some time in Italy and had already warned me that I would understand some dialects, because of my Spanish, I didn't take it seriously.

@@vincenzosplate I'm a teacher, here in Brazil, my course completion work at college was based on learning classical Latin and Greek, both of which form the Portuguese lexicon, as well as other European languages, I believe that etymological research helped in understanding the words of other Romance Languages. But yes, I agree that it is fascinating and beautiful that we have linguistic roots that unite us.

Oh but I tasted :D In Bulgaria we have almost the same tradition when it comes to pickling vegetables or making sauces in a bottle (for the winter) to use later. I can confirm that this is the real deal. It's very delicious and green tomatoes also are perfect when fried.
