Yoshis head turns into a green fireball is because when ever a normal fire ball sprite is loaded into the system/games memory,the fireball takes the place in the sprite memory table that takes the space that yoshis head chr/sprite usually is, And vice versa. And since the fire ball appears ONLY in the casstle, 1 out of the only 2 times you can't bring yoshi into a level. And because you can't bring yoshi into these levels,the developers didn't think to compensate for the fire ball shareing yoshis sprite table.

There's also a tongue graphic error which is the same type of thing, but I can't remember which sprite causes that. He can also eat things from tilesets he never normally encounters for some reason, like the Bowser statues.

I'll be honest, that Anakin "head morph" thing is so subtle that I didn't even notice it when I tried looking for it the other day. Palpatine is talking at that moment, so the viewer's attention is on him and you can really only tell it's a morph if you're intently focusing on Anakin's individual features (it's also much more obvious while watching it on a cropped loop). Was it worth using CGI? Probably not, but I'd also argue it's done well enough that 99% of people will probably never notice it. Edit: I paused the video, typed this comment, then Vinny/chat basically says the same thing 3 seconds later, lol.
