Watching you cook with Jiffy brought back so many memories. I remember it being a staple in my mom's kitchen, and I believe we tried nearly every recipe they featured. Did you know that Jiffy has been around for 95 years? I was curious, so I researched it. A man owned a flour mill in Michigan. It was 1930 and the Depression was facing our country. The man's daughter-in-law saw some little boys eating pitiful flat biscuits, and she determined that she wanted to make a pre-mix so everybody and anybody could at least eat a decent biscuit! She approached her father-in-law with the idea, and Jiffy was born. I just love that story!! When people truly want to do good, God finds a way to help them.

I did order the cookbook it came the other day in the mail. I glanced through it but havent been to get any jiffy mixes yet. I remember when I was married in the 70s the jiffy mixes were a staple in my house and were only about .25 a box.

I have never heard of it at all! The first time Ms. Lori said it, I thought her accent got suddenly thicker and I couldn't understand the English; the second time and I realized it was cultural. In context, it seems to mean outstandingly delicious or good, but the sound (and your spelling) sounds and looks like it means rollicking or moving along a bumpy road. Please explain and especially the origin of the words/sounds' because this is more foreign than British slang to me! 😂

I’ve got old cookbooks that date back to 1907 and more… The British, were always more for incorporating herbs in their cooking than most of the American dishes. I’d have to have fresh cilantro and fresh tomatoes in mine. 😋

When I was a young girl, probably 9 or 10 years old, is when I first ventured into baking. I would ride my bicycle to the store after school and purchase Jiffy cake and frosting mixes I think that they only cost 15 cents, sometimes they would be on special and I could get two boxes for 20 cents. I tried really hard to make a beautiful cake but I was so impatient that I could never wait for the cake to cool before putting the frosting on so it would always end up running off into a big puddle on the plate:). No matter how awful those cakes looked my Dad was always happy to eat a piece of the cake I baked:). The Jiffy factory is still in business in the little town of Chelsea Michigan which is about an hour from where I was born, and grew up! Thanks for the memories Miss Laurie!!!~

I love making "impossible pies!" My son's fave is Impossible Mac and Cheese Pie. Your taco bake looks like some things I used to make a lot when the children were home. One was a BBQ beef and bean bake, and the topping was like cornbread. My mom used to make corn fritters using a pancake mix, and I do not know what happened to that recipe. It was a favorite from a local restaurant, and Mom was so proud that she could make something so like theirs. We always put syrup on them for a dessert. Sweet memories. Thank you!

I'm 66. I remember my mother making corn fritters (shaped like pancakes) for us in the summers. She'd make a stack of them and give them to us, cold, throughout the day. She'd boot us out the back door to sit on the stoop and eat them so that the corn didn't get all over the kitchen floor :) Sweet memories. I recall them being sturdy and, although I have no clue what the recipe was, now you have me wondering if she may have used pancake mix.. Hm..

I cooked a good ole’ southern dish of collard greens, black eyed peas (dry packaged ones cooked in my Ninja Foodi pressure cooker) and Jiffy mix corn bread tonight for our dinner. My Mother always used Jiffy mix for our meals 60-65 years ago.
