सारांश : The World Milk Day is celebrated to attract the attention of the people on milk and to publicize activities connected with milk and the dairy industry. Many countries throughout the world have accepted to celebrate the milk day on 1st June it gives this day additional importance and shows that milk is a global food. FAO chose 1st June in 2001 for celebration of World Milk day as a number of countries were already celebrating a national milk day on or around this time. Milk is the most widely produced and valuable agricultural product in the world. Milk contains a powerful combination of essential nutrients. Also it boosts food security, nutrition and economic development of society. World Milk Day is celebrated to create awareness among the society about all these things. Scientifically speaking milk is a natural, complex, heterogeneous, delicately balanced, bio-chemical fluid it contain most nutrients our body needs like protein, fat, carbohydrates, minerals vitamins and several other biologically important substances. India is largest milk producer of the world with milk production of 230.6 Million Metric Tonnes (2022-23) and per capita availability of 459 g/day (2022-23). Milk is also important as complete food, for the elderly people. In the older age the ability to digest the food diminishes, hence absorption of nutrients from food is also affected. For such elderly people fermented milk products are good option considering their digestive issues. In the women’s health also milk plays a vital role. Consumption of milk is necessary during pregnancy and lactation. The calcium of milk is very helpful in maintaining the healthy bones of women, the deficiency of calcium can cause osteoporosis in older age women. Milk is very important source of vitamin B12 particularly for vegetarian people. Normally milk contains about 0.2-0.3 g/100 ml milk. Considering this milk can help meet about 40-50% of total requirement of this vitamin for individual. Further bioavailability of this vitamin from milk is quite high as compared to other animal sources. The quality of milk protein is quite superior as compared to other plant protein sources. Milk contains two types of proteins caseins and whey proteins. Milk proteins are considered as complete proteins as it contains all essential amino acids as required by the human body. There has been considerable interest in the whey proteins of milk due to its nutritional and health benefits to humans. The milk is classified into A1 and A2 type of milk based on genetic variants of beta casein, a type of protein in milk. The research in the area of differences between these two types of milk and its impact on human health is going on. Milk fat contains fat-soluble vitamins such as vitamins A, D, E and K, as well as some special fatty acids such as conjugated linoleic acid, which have many health benefits. Milk also contains essential fatty acids i.e. linoleic acid and linolenic which our body cannot synthesize. On the mineral fronts milk is very good source of bioavailable calcium and zinc. It contains most essential minerals required by humans, but lacks in iron. Healthy humans have a balance of beneficial or harmful microbes in the gut. The importance of these microbes as resistance factors against potentially harmful microbes have been recognized. It is known that consumption of fermented milk and milk products like Dahi, Chhash, Lassi etc. containing probiotics keeps our gut healthy. We should include milk regularly in our daily diet. Efforts should also be made by educational and social institutions to create awareness about the health effects of milk. Physical health of the people is a very important factor for the economic and social health of the country.
