Serves 6-8 people (30cm square Swiss roll mold)
・Soft flour (self-raising flour, if you don't have it, you can use soft flour)-80g
・Cocoa powder-25g
・Granulated sugar-150g
・Milk-30ml
・Unsalted butter-20g
・Eggs-3 pieces
・Golden syrup (honey is also acceptable)-20g
-Chocolate ganache
・Chocolate: dark chocolate-80g
・Double cream: double cream-120g
・Granulated sugar-2 tablespoons
-Vanilla cream
・Double cream: double cream-200g
・Granulated sugar-2 tablespoons
・Vanilla paste: vanilla paste-1/4 teaspoon
・Icing sugar (powdered sugar): a little
**Place a parchment sheet (cooking sheet) in the mold.
***Before baking, preheat the oven to 180℃ / 160℃ with fan / gas mark 4
1. Sift together the flour and cocoa.
2. Add butter to milk and warm it in the microwave for about 20 seconds.
3.Crack the eggs into a bowl and add the granulated sugar. Set the hot water for boiling to around 60℃, then dip the bowl of eggs in and mix until well warmed up.
4. Whisk the eggs with an electric whisk until they become whitish and fluffy.
Sift and add the flour from step 5.1 again and mix gently with a rubber spatula for about 8 minutes.
6. Add a scoop of step 5 to the milk and butter mixture, mix, then add it all over and mix again.
7. Pour into the prepared mold and make the surface as flat as possible. Bake in the preheated oven for about 12 minutes, until completely cooked.
8. Once baked, remove the mold and let it cool.
- While it is cooling, make the chocolate ganache.
9. Chop the chocolate and put it in a bowl. Add granulated sugar to double cream and bring to a boil
10. Pour the boiling double cream into the chocolate bowl and mix to make a smooth chocolate ganache.
-Make vanilla cream
11. Add double cream, granulated sugar, and vanilla paste to a bowl and whisk until stiff.
12. Cut off all sides of the cooled cake batter. Cover with saran wrap, turn over, and remove the parchment sheet.
13. Apply vanilla cream to all four corners and roll from the front in the same way as a nori roll. Finally, tighten with a ruler, wrap in saran wrap, and let cool in the refrigerator for 1 to 2 hours.
14. Spread chocolate ganache on top and score with a fork. Sprinkle with icing sugar, cut off a little so you can see the cut end, and it's done.
