I AM BACK AT MY BEACH HOME IN THE PHILIPPINES!
Yup, I have quickly travelled back to Cateel, Davao Oriental. This will only be a short trip to get my motor and have it shipped up to Manila. But, I am so grateful to have the chance to catch up with Mama Rose, do a few beach home errands, and just enjoy a quick dose of Philippines Province Life! In this video, not only do we enjoy eating a native durian with Mama Rose (our Filipina beach home mom), but I end up finding a new waterfall to swim in... and it is a beauty!

My goodness, your Davao home is stunning with scenery. Honestly, I hope you can last in BGC after the beauty you're used to. I know that even after 5 years in Singapore, I still miss my Capiz home. When I am able to go back, I rarely stay in Manila, despite growing up there. I'd rather be in Capiz! 😄😄😄

Oh and the fish dish Mama Rose cooked looks FAAABULOUS. 😄 I don't dare cook anything in gata because it's so easy to burn it and as you know, burnt gata is ick. But that dish looks SO masarap. Does Therine cook? Get Mama Rose to teach her the recipe so you won't miss ghe dish in the city.

I love the seeing the province life with all the beautiful beaches, waterfalls and mountains. The BGC hurts my eyes because it’s just like cities here. It's nice to see Mama Rose again. Her hairdo looks fabulous! Kulas, if you come to Hawaii you will discover a dish called laulau. It's a Hawaiian food that is made with taro (gabi) leaves too. The Hawaiians wrap pork and a piece of fish seasoned with sea salt in the leaves and steam it for hours. It is delicious! They have been wrapping meat and fish in taro leave all over Polynesia for hundreds of years.

That fish wrapped in Gabi or taro leaves reminds me of bicol express, my logo's favorite breakfast. The only difference is the version he eats is Cilling labuyo with thinly sliced pork or shrimp cooked in coconut milk with more Cilli/pepper and ginger.

Wow, Yummy!! Now, I can cook fish and Gabi leaves in Coconut milk. We cook this kind of dish in the Bicol region. It's called Tinoktok. The shrimps and crab meats are minced. Mixed with young Coconut meat. Season with salt, lemon grass, onion, garlic, ginger and hot chili peppers. They are are minced. Mixed them all. Wrap in Gabi leaves and cook slowly in Coconut milk until the sauce becomes oily. It's yummy. Thanks Mama Rose for sharing your cooking in a diffrent way.
