This blender will be used for my experimental sauce batches, and of course for my videos. I have other equipment I use for my larger commercial batches of sauce. Happy to show that too if you are interested.

There's no way you'll be disappointed! Used one of their commercial models in the restaurant I worked at, which wasn't too much different, and it definitely got put through the paces daily! Never once did it overheat and you could turn grits into corn flour in no time!

You will never go back. Can even mix soup ingredients and heat at se time, works at such speed. Also great on pulse for breaking spices for biltong.Great customer service from those guys also.

I love how easy it is to pasteurize hot sauce with the Vitamix. About 6 minutes on 10 and the sauce will reach 165F(74C). My sauces hold their color way better over time when I do this. Edit: The scraper they sell is pretty nice, makes it way easier to get all the sauce out of the crevices on the larger container.

I believe you're going to enjoy that unit. I have the 6300 model. At about $500 it's a grade up from yours, but should be built for a lifetime of use for what you're using it for. Keep in mind these are designed and built for professional use. And you don't throw these away if you have any problems. They have shops that do repairs. Your better bars in the world use these. They can chop up ice all night long,night after night for making margaritas, daiquiis, etc. without problems. But they blend so fast you can not only blend the ingredients to make soup but it will actually heat it up. I'll sum it up this way. Mine is in my will for whom it will go to after I pass on hopefully some 20 to 30 years from now. Enjoy. 👍🌤🍻🌶

I was referring to the inevitable, that when I pass away 20 to 30 years from now ( I'm currently 62 and diabetic, so I'll be doing good to reach that age,more will be better) The point is that the blender will still be going strong. Plastic can safely heat up to 200F, if you want it hotter they recommend the SS 48oz container.

Shaun, the containers just sit on the base because the motors are so powerful it acts as a shock absorber which helps prolong the life of the machine, it will let the container twist a bit. Also with the Vitamix you are able to completely destroy the seeds and pulp, your food mill wont even catch anything. Many people go ahead and use it for pasteurization as well. This can save you a lot of time on your experimental batches. I have watched all of your videos many times and I have been wondering when the Vitamix would arrive. Enjoy!!!!

Looking forward to using it! Only problem I have is some seeds can be very bitter, depending on the variety. So pulverising then into the sauce is not always a great option.

@@ChilliChump True, In some of the fermenting groups i'm in some people say it makes it bitter some say it don't. I haven't noticed any additional bitterness myself. I kind of thing fermentation pulls a lot of the bitterness out of the seeds into the sauce anyways because sometimes the brine is pretty bitter. Maybe in sauces that contain peppers that are packed full of seeds such as peri-peri it would cause some bitterness. You could make a good video. Batch A blended/strained sauce, Batch B pulverized sauce. Change nothing else and compare the sauces. (blind tasting of course)

I have tested with about 30 varieties. The bitterness varies massively. Some don't have any bitterness at all...some are awful.

I bought one (Vitamix) some five years ago after my Ninja (just like the one you had) kicked the bucket. Vitamix is a pricey blender (in my case, I waited for it to go on some discount in Costco to get it), but it does job much better than any of my previous blenders and it is much, much more durable. One of the first differences I noted between Ninja and Vitamix, is that VItamix makes puree out of anything you throw in it. I have been using it for five years now without any issues. Enjoy yours....

I'm so glad you finally invested in a Vitamix. It's going to change your hot sauce game. You will be able to blend sauces and never have to strain. Plus with the amount of friction heat produced you can cook things

Hey Shaun. Thanks for providing us with great content. I recently watched your video where you dehydrated lemon drop peppers. They completely kept their color and looked fantastic. I grew chili peppers for the first time last year (lemon drop) and dehydrated them. Mine turned brown and had more of a leathery texture from slightly cooking. Could you do a video on your method of dehydration? I think it would be a great video for everyone to see. Thanks!

I considered getting the ninja repaired, or replace the damaged components. But I didn't want to sink more money into it. Rather invest in something like this which had a great warranty and is built to last. Good luck with your decision too John

The base serves a purpose. The motors are so strong (2.2 hp) on these it lets the base twist a little, acting a shock absorber which greatly extends the life of all of the components. Its a little odd at first but once you use it you realize that its not an issue and its nice actually that you can just pick it up and sit it down and don't have to lock it in place. The machine will also automatically shut off or wont turn on if the container is not sitting on it. The base senses the different Containers and adjusts programs/etc.

less than 1 year and my A2300i is having the dreaded container not detecting issue. the "virtues" of "smart" appliances 700 euro paperweight of course Vitamix couldn't give less of a fuck about its international customers
