This is an amazing full recipe to make a real dough that is good to make also a vito style Panuozzo/ Sandwich
Here is the full recipe "Vito Style" This is for 4 nice Sandwich
1st Make the Poolsih (500ml Water, 500gr. Flour, 5gr. Yeast, 5gr. Honey)
Rest 1 hour r.t. Then 24 hours in the Fridge.
2nd. Use all the poolish and add on: (500ml cold Water, 5gr. Yeast, 30gr. Salt, 300gr. Semolina, 600gr. Flour )

I figured it out as I have my own sourdough when you say poolish I feed my sourdough and put it in instead of poolish it’s amazing. Keep up good work love your recipes thank you

Looks absolutely delicious. This is great combination. I bet there are lots of other combinations worth trying. Poolish is the key for best ferment flavor.

It looks amazing! All you need is a $1800.00-3000.00 mixer and $9000.00 oven. If you try this in a $1000.00 home stand mixer - the engine will burn on the first pizza (it will also shake and travel off the table.) KZbin is a gracious place - there are reviews of this.

Thank you so much, Vito! I followed your recipe yesterday and added rapini, pesto, sausage calabrese, and burrata. It turned out really great! I used my KitchenAid mixer, but I agree that a professional dough machine would be better. Nonetheless, it worked well! I would love to see a video that explains the different combinations of toppings you can add to a pizza and why they fit well. You did a great job explaining why the burrata complements the spiciness of the sausage.

That looks delicious! I remember the Pro-Level NY Style Pizza Dough recipe video had a Panuozzo Napoletana dough that had corn meal instead of Semolina flour. I’m sure both are delicious!

Hi Vito. I am new to your channel looking for sourdough pizza dough recipe. Found your video which is 3 years old. Big thanks for that! May I ask you : Why don't you do sourdough anymore? I mean - it's possible to use it as poolish as well, and if correctly made it's not sour at all. Is it because longer times or weekly care? 🤔

Very nice video like always with a big heart, you mention in the written recipe 30 gr of salt and then in the live video you said 20gr of salt , so which one we pick , 30 gr or 20 gr of salt and you forget to mention the 50 gr of oil in the written recipe , thx a lot for that recipe , keep up Ur generous smile and heart.
