disparity in color is due to the temperature, the higher the heat, the darker your finished product will be. Generally chefs want it to be as light as possible. I've never tried bear before, but that crackling looks tasty.

To get the ideal light color turn your temp down and start with a light coating of oil on the bottom of the pan before putting the fat or lard in.

I think and wild game fat can be stored for long periods of time. Wild animals east in a wild environment thus consuming a great deal of antioxidants thus keeping it from going rancid. Not so for commercially raised animals.

I received some bear fat from a neighbour. I tried to make oil but it turned out a little fishy. Any suggestions on why I can do with it? I tried to bake with it and... yuck.

This guy did it all wrong, no offence to him but this was a tutorial on what not to do. When rending fat you never want to heat it up to the point where the fat pieces start to fry and make crackling. Crackling is good but that's done after the first rendering. If you try it again, take your fat and cut it up into small pieces, smaller the better. Use a meat grinder if you got one. Now take all the fat and put it in a pot with a little water, not much. Then heat it slow and low, eventually it will start to look soupy with lots of gooey fat pieces still floating around, nothing should be frying or bubbling away. The fat pieces will still be white and soft floating around. Strain that through a super fine mesh or paper towel. That's your rendered fat, it should be clear and when cooled white as snow. Left over you'll have all the fat that will look like cooked instant oatmeal. If you want cracklings you can now take that and throw it in a pot by itself and slowly heat it up to frying temps stirring often, the rest of the fat will render out of that and the fat bits will fry and turn into cracklings. Scoop the cracklings out and throw that fat away or make some french fries. The point is when fat gets too hot it starts to break down and that's when you get those fishy flavors. Rendering your fat low and slow and not trying to get 100% of the fat rendered in your first go will give you way better product.

Cooked it too hot. It came out brown. Use a slow cooker with a bit of water and ladle it off the top. Nice white fat and it later separates into oil and grease at room temp. (posted from my wife's account, lol)

I always use a grinder for the fat. It makes the crackles very small and enlarges the amount of oil. The rendering itself should be done with the minimum of heat possible. This looked a bit too high to be honest ;-)
