I love the NYC vibes of your videos. I was so close to visiting it at one point myself. I had experience with modeling and in late 2015 I was in contact with Capcom about the facial likeness role of Leon for the Resident Evil 2 Remake. I failed to mention I also have a voice acting background, in the end I lost the part and I can't forgive myself for wasting such an opportunity. I'm not sure if somebody's already said this but you can do everything in the Crock-Pot including the browning of the meat or the onions etc and you can also shred right inside the crock pot you don't have to remove the meat. I'm so excited that you are starting on this food discovery ❤

You might be thinking of the instant pot with browning the meat. You can't with a slow cooker/crock pot. But it's perfect with how she did it, easier to shred.

Just a tip, nothing can ever go wrong in a crock pot! As long as you cook it for the length of time the recipe calls for it’ll be good! Another tip I would have diced the chicken in small skinny strips or really small cubed chicken with the taco seasoning 😊 Add the onion, & what the other ingredients were that you fried. It helps with seasoning getting into the meat more.
