◉ OVEN ALOO GOBHI
chopped potatoes, cauliflower, peas, cherry vine tomatoes, red onions
salt, turmeric, fresh ginger, red chili powder, whole black cardamom, green cardamom, cumin, whole peppercorns, cloves, choice of oil/ghee to cook in. Bake at 180 deg.C for 25 minutes, mix everything, add a little butter or ghee on top and then bake again for 10-15 minutes.
◉ ALOO CHANA
chopped potatoes, boiled chole/chana, chopped tomatoes
ghee, hing, cumin, salt, turmeric, red chili powder, coriander powder, whole black cardamom, bay leaves, star anise, kasuri methi, tamarind paste, coconut cream.
◉ HALLOUMI TRAY BAKE
sliced halloumi, red and yellow peppers, sliced red onion
olive oil, salt, pepper, soy sauce, sriracha sauce, maple syrup, spring onions, sesame seeds.
◉ BLACK BEANS
boiled black beans, onions, garlic, jalapenos
dried oregano, coriander powder, red chili powder, touch of ketchup
◉ BROCCOLI SOUP
broccolini tender stems
olive oil, salt, pepper, oat milk
