Is it possible to remoisten the mud material after it’s a little older? When it’s fresh and more moist, it spreads more easily

You would need to add a tiny bit of water and stir the whole mass vigorously so the water is distributed evenly. Too much water will make the product run and bleed, it's tricky like when you add water to plaster.
