I run VOID Linux 2024-03-14 (XFCE) on the HP Stream 11, with 2GB RAM, and 32GB eMMC main drive. Let's find out how it performs. This Linux version seems to work quite well, as shown in the video. The laptop has a Celeron N3060 (dual-core) low-power processor.

awesome. Use (Sudo xbps-install -Su) to update and upgrade the distro. then use (sudo xbps-install void-repo-nonfree void-repo-multilib void-repo-multilib-nonfree) to unlock the non repository. then update the repo again by doing (sudo xbps-install -Su). Then update the default intel basic graphic driver by installing (sudo xbps-install mesa-dri mesa-dri-32bit xorg intel-video-accel intel-media-driver) and reboot the system.

Void is 100% my favorite distro I use it on a Latitude D630 with 3gb of ram and KDE plasma and its just awesome

Void GNU/Linux will run well even on a similar system with 1 Gb of RAM. Most of such systems are 32-bit, where Void+XFCE will only take up ~320 Mb of RAM. If you replace XFCE with a more lightweight window manager (such as IceWM) this will drop to just ~200Mb. You can actually go down to 100-150 Mb with even more lightweight window managers.

It is my understanding that the small quicklaunch bar at the bottom of the default desktop view is a standard feature of Xfce. So it should be there for most installations that come with an Xfce DE.

Void Linux is great. I have a lower end laptop I use as a "help-desk" PC sometimes. Not quite as low end as this HP stream. Genuinely one of the lightest distros especially the MUSL edition.

Void doesn't have apt that's a Debian/Ubuntu/fork thing. Void isn't based on Debian/Ubuntu, it's an independent distro and has xbps instead. This tiny netbook isn't useless after all. It forces you to drop Windows and to learn more about Linux and efficiency. Be warned it's a deep rabbit hole.

How would this machine perform with Windows7? I guess that XP drivers are not available, to make it a retro XP gaming machine, but most old games should work fine on Win7 32bit. Compare it with Windows 10 installation that you already made a video about? And again, before installing, make a EFI partition to use secure boot if you do not have it already.
