Photos of Caruso show his mouth was an oval lying on its side with the corners pulled back - even for ee and ooh. It's there in the evidence. The first rule of Bel Canto is "no action in the throat". I think the problem is thinking formants are adjustABLE rather than adjustED as you mentioned many singers do this naturally. I challenge that and say they might perhaps manage their breath/diaphragm naturally which results in correct formants. VMs are I believe AUTOMATIC to correct breath control. Trying to "do" them is like holding mercury. They happen naturally when the breath is right and consonants are lightly tapped with tongue, maintaining legato. VMs are like "putting the cart before the horse". The correct breath pressure/placement creates relaxation in throat and ease of passagio.

This is a nice video! I'm curious what mode of voice "AW" would be sung in on a high note (E4-G4). Is this a "belt" vowel, or more of a legit vowel? It's probably the most confusing one in all of singing pedagogy because it is often confused with "OE".
