Ok this is driving me crazra but everyone keeps the burger at 20% fat but I always wondered can you use more fat like 30 or 40%? How much does the fat effect the taste of the burger and are thier different ways to cook each one due to the fat content?...

I really liked the addition of the pop up text identifying which burger they were talking about. That was great! You could also throw a label on screen below each one as it sits on the board. Then you can add numbers to each as each taster ranks them. Maybe a chibi-style Avatar of each taster holding a number-card like an Olympic judge.

I grill Wagyu burgers all the time and have to agree they are much better than regular 80/20. I agree with the other poster that you should have done a 4th one Wagyu with the dry aged fat!!!!!

I dunno I've tried both and I still prefer a good chuck, short rib, brisket combo myself. Not a fan of the texture of steak burgers. It doesn't have the same satisfying mouth feel.

for steaks i do agree that you should have a very basic seasoning to compare the meats, but for burgers I think to have a truely representable result, you need to dress the burger in the way that you would eventually eat it in a "real world scenario". If you put some condiments on it, the dry-age will probably work even better, because the funky flavour complements something sweet like ketchup or mayo, while a the vinegar of a pickle will completely round out the flavour profile of the very fatty wagyu. It is kind of like making different salsas or dips and comparing it on a spoon; you need to try it on the chips that you are using to eat it. I do like my burgers very classic, but imagine that dry-age beef with some caramelized onions and a hint of ketchup underneath. Now that is how you can actually judge the taste of a burger.

It highlights the flavor of the beef. Remember this is a trial for different beefs. You don't wanna get caught up in how delicious the brioche is 😒

@@DNice5865 Good bread doesn't just mean that it tastes good but also that it lacks the very unpalatable taste of cheap bread. Same with the cheese, that bullshit has a lot of flavor that will ruin your great meat. I mean it's like eating caviar by putting it on a flamin' hot cheeto.

It's way too dense for a burger and I personally think it was only ever marketed as the "proper choice for a gourmet burger" because it looks nice..... Not because it's actually what's best for a burger. Remember a burger is a sandwich, not some top of the line, elegant culinary masterpiece. A low density bread that helps to highlight what's in your sandwich is best. If you have a problem with anything, have a problem with expensive wagyu beef being slapped between any two pieces of bread in this fashion, not with what type of bread is used.

Also he never mentioned brioche, there's hundreds of different kinds of bread that you could theoretically use, and I have used many to delight. I hate the extremely soft, "processed" bread that is so common to be used. It doesn't help with the flavors at all. I personally prefer something with the slightest bit of crunch that also tastes good on it's own, to accentuate the flavors and provide a very good base. A burger is only as good as the sum of it's parts, or a burger is only as good as it's weakest link! Spin it however you want, it doesn't make any sense to use cheap and horrendously tasting bread when you're serving up some really high quality meat. A good bread wouldn't necessarily hide the flavor of the beef, it would most likely just work better with it. And don't just ignore the cheese! Come on. This is why I vote for candidates that support capital punishment.

Put tomato and onion under burger so it absorbs the flavors of the beef and lettuce on the side, leave the top bun off - always let the customer put it and the lettuce on. That way it doesn’t get soggy. Just a tip for the peeps in the food industry:) also - mix bacon into the burger while you’re prepping the meat - ugh!!!! So good

Thank you! I've wondered what you can use the trimmings for! Next video: Can you rehydrate dry aged trimmings? Maybe sous vide at a temperature just high enough to soften the baconator compound butter you'll use to infuse fat back into it! Or just water marinate in the fridge? Flavor marinade? Rehydrate by covering it in crushed garlic for Ninja! But enough talking, let's do it!

For those of us who can't afford a $20 patty, here's a trick that I use at home. Forget the 80/20, it's what the grocery store charges the most for because it's so popular. Buy leaner grinds like 85/15 or 90/10, and then work in flavored oils at home. I'm partial to toasted sesame oil, myself, although a nice chili oil would work as well. Because capillary action conducts the oil all along the interior of the burger, you get a distribution that's more even than regular ground-up fat. And because you can use this step to impart flavor, you get a depth from your meat you never thought possible, because that oil is flavoring the meat all the way through instead of just sitting on the top.
