You're so brave, Marshall! I'm Filipino but never had anything like that. By the way, "balat" means "skin." I think that's what they were referring to when they described what was under the first layer of skin(?). And "towel" refers to tripa or "tripe." I think it's called towel because of the way it looks.

"Walastik" is a street lingo for amazing, wow, grand, cool 😎, among other things; it's used as an admiration or to compliment an object such as a nice expensive attire someone is wearing or in this case, the delicious taste of the pares. It's a Filipino take on the word Fantastic.

Although I agree that "Walastik" is used in such expressions of amazement, Walastik in the context of food actually refers to types of food that have NO STICK, which is the literal meaning of the word. It usually refers to meat products that is not served on a stick due to its being 'non-regular' barbecued products. Since Walastiks are parts of an animal that are mostly discarded, preparing it in a very different and delicious way, turns it into an amazing food experience, enough to make you exclaim, "Walastik!".

@@allanbengco670 I'm sorry sir but socal benny got the right definition/description of the word "walastik". It was first coined in the 70s and 80s, as the Tagalog language is a growing language. It seems in every generation there are words coined for such. Take for instance the word "jeprox" which was also coined in that same decade. It also defines/describe a person who gets trendy with that generation, wearing long hair, John Lennon glasses, bell-bottom pants, "wet-look" long sleeved shirts, dangling "peace" earrings and necklaces.

My grandfather told me this during the time they were selling Walastik and Walanjo in Malibay, Pasay City during the 80s. I am also a 70s kid, being born at the early part of it. Let me be clear that I am not disputing you nor his definition of Walastik. In fact, I 100% agree that Walastik is used in amazement 100% all the time. What I said was just to define that in context of food, its literal meaning came from "Walang Stick".

Marshall it's so wonderful you've featured in the nearby place where I grew up and live that's in Macabulos St. Bangkal, Makati where you passed by at end of your vlog. Though I've never tried to eat pares in that place in Mascardo St. cor. Apolinario, it's not unusual to see the flock of people lining up for the famous Filipino street food out there so social distancing it not observed well. Pares have been part of Filipino delicacies which is quite affordable and totally exotic due to internal animal organs it serve and delivers unique flavor from its soup! Though I wanted to try it cos it looks yummy but my only fear is contracting Hepatitis A from the food preparation, I still hope that this virus is being killed from their well-boiling and cooking. It's our kind o' street food and it's going to stay for good because it's cheap. The essence of eating it was you've enjoyed the meal, filled your tummy then go! Oh you forgot to drink Buko Juice which you captured, it's also a better combination with the pares. Thanks Marshall for vlogging it in Bangkal, Makati! Take care and stay safe. 😁 👏🏼🍲

Me and my wife sometimes eat it when we see a vacant space. it is usually full of people. We eat it when we crave a hot soup. It is cheap and it is like a comfort food.

Towel is twalya, it is a part of the digestive system of the cow where grass were being digested, it is like a towel thats why its called like that. Im in batangas, try lomi batangas and goto (its like bulalo or soup no 5) but goto in manila is like rice porrage. Very nice and stay safe

Marshall, the towel is a tripe, an edible lining of stomachs of animals from cattle, pigs and sheep. In a little carinderia probably they have the pigs tripe.

You cant beat Philipino time. Its great to see you try different local foods there. I am the same but you have to try the foods. I think if you are living there , Dont keep on eating western foods. To me, Western foods are a once a month treat. I eat most Filipino foods and can survive on them.

I havent tried walastik pares but i think you'll find regular pares more palatable. I recommend pares at cocoys visayas avenue q.c., it is one of my go to if im craving for pares and has been there since i was a boy. Pares retiro is pretty good too and cleaner in my book. Since youre at qc might as well try papaitan, goat innards soup, and ceviche goat/kilawin na kambing. It is highly recommended and they are located at old sauyo rd called kambingan ni tsong 👌
