You should do the chopstick trick to check if your oil is ready. Stick one of the ends into the oil and when you see it bubbling a lot then its ready.

I commented once already that you need a saltwater pier net for when you fish this spot. It would make landing fish here much easier. I like your willingness and skills to multi-species fish. It can remake a lousy day of fishing into a good day
