Walnut shaped cookies with the best filling ever||Nicole's Kitchen

Have you ever tried these wonderful walnut shaped cookies? One of the most popular cookies in Romania , walnut cookie,are always on the table at festive events , especially for the Christmas table!
They are made with a walnut shaped mold and are filled with a variety of filling,from jam and rum,ground walnuts and chocolate ganache and nuts ,cocoa powder,sugar,butter or chocolate from a jar.
I have tried many combinations and I came up with one that so far I like the best .
Here's what you'll need to create these beautiful cookies .
First of all you'll need a mold . I have an old mold, but you can use an electric one. Keep in mind that the electric molds doesn't really have that much depth so the cookies will most probably need less filling.
Ingredients:
For the cookie shells
📌250g room temperature butter
📌550 g flour
📌3 eggs
📌10g baking powder
📌1/4 tsp salt
📌 vanilla extract
📌 almond extract (optional)
For the filling
📌500g mascarpone cheese
📌200g roasted and grinded walnuts
📌the grinded edges of the cookies
📌200g hazelnut chocolate
📌200g dulce de leche
📌1tsp rum extract
