when stretching out dough, what I do is what I learned at a pizza shop I used to work at. before the dough rises its best to separate the dough balls for each pizza on a tray 3-4 inches apart with a little oil on top and covered in plastic wrap and set aside to rise. after the dough is done rising, place the dough "ball" on a flowered or cornmeal surface, take the bottom part of your hands and push the dough out one hand wax the other wax off so you push the dough out in separate direction and rotate the dough in this motion. (you can do this to stretch out the entirety of the dough) but if you want to do it the "pizzeria" way, after it is spread out enough to fit both your fists, this is where you stretch out the dough the rest of the way. flour both fists, and the motion I was told is "Fist around the wrist" you take your dominant hand and pull out and down a couple inches, then take your non dominant hand and slide it under your dominant hand, then move out and down again. the dough should roll around your fists increasing in size as you go. another way is to roll both your wrists as you pull , it does the same thing but can be a bit tricky to get the knack of.

I brush mine with some garlic butter before I take it off just for another layer of flavor. You guys are correct, you can add a lot more in the middle, the dough will stretch, you could also cut a little less dough and still get good amount inside so it will cook faster. BRAVO! GENTS BRAVO!

Have you guys ever tried making cracker dough? It takes 2 days to make. It ferments for two days. It comes out super airy and flaky. Drop some corn meal on the griddle..it basically suspends your pizza/calzone above the surface giving it the perfect crunch. In California, Me n Ed's pizza and Shakeys use this dough. Me N Ed's uses the corn meal with a traditional brick over while Shakeys uses a Spiral air oven. Ever since I subscribed to this channel, I geek out on food.

Thank you so much for watching!! We typically use vegetable oil for most cooks. When we have it, we’ll use peanut oil for shallow frying, and olive oil for many cooks as well. I’ve also really liked using avocado oil, but roughly 80% of our cooks are with veggie.🤙🤙

Happy New Year!!! Love the new sign! Calzones and pizza may be on the top of my favorite foods, so definitely a good way to start 2021! Even though you didn't stuff them like crazy, they looked really good. It actually probably made them easier to cook on both sides, because calzones are never actually flipped. A store called WinCo near us makes them fresh to cook at home, and they are packed full of goodies (like when I say packed, I mean enough pepperoni for a 28" pizza packed. I usually just made them at home until WinCo, but it's just easier to let them make 'em. Anyway, Calzones aren't supposed to have tomato sauce inside, you just dunk them in marinara; but I am with you guys, I love sauce, so inside sounds good to me. I love how pizza sauce and cheese melt together too, and you can't get that without sauce inside. So any inside sauce haters out there can just zip it! Griddle on!
@waltwins4 жыл бұрын
Thank you so much man! Yes! I prefer a ton of sauce, but mostly for “dunking” the calzone in - this one is actually inspired by a local Italian restaurant in Gainesville FL, that does put sauce inside. We hope led it would help with the heat inside - and it worked well!! Much love fam!!🤙🤙

Just a suggestion. Pack it with a lot more meet and cheese. Don’t put a lot of veggies in it and leave out the pizza sauce. This will allow the bread to cook faster and won’t get soggy. Use the pizza sauce on the side for dipping.

Nice! I would suggest less sauce (dip it in sauce later) , more filler ingredients + low moisture (moisture is the enemy here) ricotta cheese, more garlic, basil, oregano, parmesan/asiago cheese and a light dusting of cornmeal for the griddle part. Secondly, as they firm up enough chuck them in the air fryer to get the side dough cooked more evenly.

Great video 😊. Love the instruction. I don't know if anyone has said this, but it helps if you make sure that your sauce isn't too close to the edge when you're pinching it closed. If it is the edge doesn't seal properly, and your cheese and other stuffing can come out. Also as much as I love Hawaiian pizza, it doesn't translate well to calzone. The pineapple has too much juice and tends make it soggy.

Wow, excellent lint, thank you! And that’s a great thing to know as well, I love Hawaiian pizza, but for sure won’t be turning it into a calzone!😂😂🔥🔥

Looks great! Just got a Blackstone for Christmas and am loving it so far. Just curious, you were worried about the sides not cooking. Could you have pushed the calzone against the edge of the griddle to get it to brown some?
@waltwins4 жыл бұрын
Thank you so much for watching, and congratulations on the new Blackstone! Yes! In fact, we should have been utilizing the sides for this reason - it’s something we for sure need to get better at - the whole surface, including the sides - are great for cooking! Take care and GRIDDLE W!🤙🤙🔥🔥

Publix dough is hard to work with. Full of gluten. Very simple to make your own pizza dough. 500g 00 flour 280g water Instant yeast 3/4 tsp Salt to taste Kitchenaid mixer with dough hook for 7-8 mins on level 2 Cut into 3 dough balls and put in Tupperware overnight. Let warm to room temp prior to using. Good luck.

@waltwins2 жыл бұрын
No, we aren’t fans of ricotta cheese, and we have been told that without it, it’s Stromboli? However, there is an Italian place across from Brett who sells them this way, in fact, they tell people that don’t put ricotta in theirs.😋 Thank you so much for watching Maria! Griddle on sister!!!😁🤙❤️

Also, a little tip on your merchandise, you should feature it better. For example, start your videos without the aprons off. Show the shirts while you intro the video and feature the ingredients. Then before you start cooking, mention you are grabbing your official Waltwin’s apron and it will draw people to both your shirts and aprons.
@waltwins4 жыл бұрын
Boom. Yes! We have been “shy” about pushing our merch, mainly because it was something we mulled over for so long, but we totally need to get better at it - it’s always easier for us to promote the cooks and other products, but we get sheepish when it comes to our own stuff. Thank you so much for the honest feedback fam!🤙🤙🔥🔥
@flagatorfan4 жыл бұрын
@@waltwins that’s why I’m saying to show the shirts in the intro. It lets people see something cool but you don’t have to push it like a used car salesman. 😂😂 Either way, as a third party observer, I can tell you, your pitch on your merch does not come off as gratuitous. If it ever seems pushy, I’ll let you know. 😀👍

No pizza comment, but you keep commenting about the fact that "Even on Low, my Blackstone cooks pretty hot". For starters, perhaps you could put some kind of regulator valve on it to regulate the pressure of the gas coming in. That would allow you to tweak it for a true "Low" temp you may be looking for, and let her rip when you want a good hot cook.
@waltwins3 жыл бұрын
Thank you so much - it actually has a good leave for us, but unfortunately we tried too many different ways to explain the exact temp and cook zones and it still seems to confuse people - for sure a regulator would help. Thank you for watching and for the suggestion!🤙🤙
