The top voted chicken fried steak in Texas is at Mary's Cafe in Strawn, Texas and they use this same method (on a commercial flat top not a Blackstone, obviously). I've been there and it's definitely the best I've ever had. I guess cooking it on the flat top is the way to go! I can't wait to try it on my Blackstone.

Great video, as always! Love what you guys do with the Blackstone. One comment though, I'm from the Midwest, and have a family style restaurant background. For us there is a difference between chicken fried steak and country fried steak. From what I learned "chicken fried" is breaded and dropped in a deep fryer or skillet of hot oil (like fried chicken). "Country fried" is prepared like you did in this video, with oil on a flat griddle. Both are great, but at least in the Midwest there is a difference between the two.

I'm glad you mentioned the levelness (Is that a word?) of your griddle, it reminded me that I had recently bought a Craftsman 24" level (got it at Lowes UPC 885911 573917 on sale) just for the purpose of leveling my griddle. For some reason, I had set it down in my garage after I bought it and had forgotten about it. My griddle seems to have the oil pool up in the upper left corner too. What size washers do you use for leveling your griddle? Had to come back and edit, this looks delicious, will have to "Give It a Try" as Todd Toven says.
@waltwins4 жыл бұрын
I can’t remember, but I do know recently someone recommended grade 8 1/2 hole washers. Mine I know we’re thin but I had a handful of them, this way I could adjust as needed. Thank you so much for watching!🤙🤙

P.S. just checking - is that right on measurement for salt/pepper in the gravy?
@waltwins4 жыл бұрын
We actually do it “to taste” and our measurements are not exact for this one - in fact, after the first 2 teaspoons, the light the cook I added more of each. - Brett added more pepper just before we served and it was spot on.

Blackstone: Where prep takes at least twice as long as any cook. This looks delicious. Question: You used vegetable oil. I normally cook with avocado oil, but also have canola oil on hand. Think either of those would work for the shallow fry?
@waltwins3 жыл бұрын
Thank you so much! I would think they should be fine, I’ve never used Avocado oil for shallow fry, but would have no problem trying it! Canola would work great as well, I used to deep fry with canola.😄😄🤙🤙

Love your work here. Guys, might be some Blackstone Sacrilege but, why not put down a 2" Stainless Steel Steam Table Pan as your shallow fry pan. It will heat quickly and no paddling the oil around...JJ
@waltwins3 жыл бұрын
Thank you so much man! We will have to look into it - we are always careful to show/recommend a product not for its intended use, but if there’s no safety concerns, it would be nice. We’ve considered using disposable aluminum pans for the same thing, but need to do more research (as it seems it may be a safety concern). Take care!🔥🔥
@ChefJimmyJ3 жыл бұрын
@@waltwins I can't see why Disposable Aluminum would be an issue. They are Food Contact Safe, are used in Catering to hold Hot food, even Acidic Foods with Tomato or Citrus components. They are also suitable for food Storage. Nice part about Stainless Pans, they are sturdy reusable, better for the environment. Thanks for responding and the Love. As a Fluffy, Bearded Chef, I feel a sense of Comradeship with you Gentlemen...JJ😆
@waltwins3 жыл бұрын
@@ChefJimmyJ haha! Agreed brother! In doing research, they are safe for exactly what you mentioned, however, not high heat cooking. It is debatable which is why we are still doing research. We are also looking in to using the restaurant higher quality, thinner pans. Also, we actually enjoy the process of the shallow frying - it makes us feel like we’re more active cooks!🤣🤣

Years ago I worked at McDonald’s and we used a black brick to clean the grill every night.( funny thing you could rub it on any other surface and it smelled like a fart). The grill always looked new. I seen where you can buy them on amazon. Could you use it on the black stone?
@waltwins4 жыл бұрын
Hey! Actually some have mentioned the brick, but apparently it doesn’t work as well on the cold rolled steel as it does on the stainless steel. That’s funny about the brick smelling!🤣🤣
@g3everex4 жыл бұрын
Thank you. I used to take a piece of the brick to my future wife’s house.It would drive my future mother in law crazy. She would blame her husband or my wife. I would always say somebody needs a doctor. I later showed her what I was doing. I’ve been married for 41 years so this happened a long time ago.lol

Those cooking gloves...are they one time use or reusable? And as far as the wristbands- multiple pairs or just one? One final note - can you say in future video, “This (insert menu item here) really claps back at ya.” Thx
@waltwins4 жыл бұрын
Hahaha!! We will totally say it! We have a couple of boxes of the gloves, we use one pair per cook, unless we need to switch mid-cook - the wristbands, multiple pairs (two per arm, per recording sesh) - gotta get the look on point, right?!🔥🔥💪💪
