Tripe soup is a traditional type of Czech soup, that contains beef tripe (or pork), onion, garlic, lard, flour, salt and spices such as cumin, marjoram and ground sweet and hot pepper. It has a specific taste and density. Tripe is made from pre-cooked foregutts (cap, rumen and book). The soup is known as "station restaurant soup".
Mushrooms, such as oyster mushrooms or Judas' ear, are also used as a substitute for tripe.
