A favorite recipe from my grandmother! During the Great Depression, food was not wasted. Something was created from every part of food! Hope you enjoy this “throwback in time” and it also becomes a favorite of yours!! + dehydrate the watermelon for a fruit roll up candy that all will enjoy!! Nothing goes to waste! I’ll put the recipe down below in the morning after this has uploaded!
Recipe:
We only had 1/2 of a large watermelon, so I cut that up and used the rind from the 1/2.
8 cups Apple Cider Vinegar
6 cups water
Bring to a boil, add bag of spices when quite hot:
2T Whole Allspice
1T Cloves
2 or more pieces of stick Cinnamon
1T Mace
2 pieces of peeled Ginger
At boiling point, add 8 cups of Sugar, 3 or more thinly sliced Lemons and 2 teaspoons of Salt.
Pour over rind and let sit overnight in refrigerator.
Day 2 - Pour entire mix into pan and bring to a boil. Once boiling, remove the rind and place into Jars, put a stick of cinnamon down into each jar as well as 3/4 of a teaspoon of pickle crisp.
Let the brine, spice bag and lemons lightly boil for about 10 minutes, stirring. Remove spice bag and lemons, discard.
Ladle brine into jars leaving 1/2 inch head space. Place hot jars into water bath canner. Put on the lid. Once boiling, process for the recommended time for your altitude! Turn off heat, remove lid and let the jars sit for 5 minutes. Transfer jars to a towel on the counter, and let cool untouched for 12-24 hours.
If any jars do not seal, move that jar to the refrigerator, once cooled, and enjoy immediately!!
(My grandmother would be proud! The pickles turned out FABULOUS!!) 😁

Great video, very informative. Covered everything. Please don’t take this wrong because I don’t mean it to be rude but If it was a little less “By the numbers” and more relaxed I think it would have been better.

@cheryl knight - not too big, it just takes awhile to dehydrate all the water out of the watermelon 🍉 😁

@@movednorthhomestead7244 I would love to know does it come out kind of chewing like a fruit roll-up? Or is it kind of crunchy? I've seen some dehydrated strawberries that were crunchy it was like they were air fried but they didn't have any flavor. Thank you for taking the time out to respond to me. I do appreciate that! A lot of people don't answer their subscribers back. And yet some still take the time out to respond and it's very much appreciated by the people who subscribe! I'm asking about the watermelon so that I know what I'm looking for while I am doing these things. And I haven't seen anybody make that brine like yours! That's so unique from what I have read and seen! I'm going to go get a watermelon today! Because I'm going to do it! Thank you and God bless!

@cheryl knight - they are kinda like a cross between a fruit roll up and a jolly rancher. If you want more chewy, leave the cuts a little thicker and long. If want more crunchy, do thinner and more square. Or do both!! 😁 The rind pickles are more savory - and I absolutely LOVE them!! I was so happy to find her handwritten recipe! I hope you love them too!! I try to answer everyone - specific questions like yours help!

I can't wait to do the watermelon on the dehydrator! And I noticed that you didn't put the processing time for the Ron's I know that you suggested that we go and put it our pressure gage number mine is 11 where I live. But what is the processing time? I can't wait to try it!! I have heard of this but I thought the brine was like pickle juice 😆 lol yuck! This here sounds so good! And thank you for sharing such a speacial Recipe! God you & yours.

These pickles are done in a water bath canner. Pressure canning is not necessary for pickles. Water bath, for pickles, for your altitude- I am over 1000 ft above sea level, so I processed for 15 minutes. Turn off the heat, remove the lid and wait 5 more minutes before you remove from the canner. Then 12-24 hours undisturbed till completely cooled and lids have popped.

How long does it take to dehydrate watermelon? I tried it once, and ended up tossing it after a few days.
