Any animal product that enters my kitchen leaves as either soup, stock, charcuterie, jerky or tonkatsu. Any fruit or vegetable that enters my kitchen leaves as either soup, stock, trail mix, agua fresca, fruit leather or biogas. That's how it's done. It's how my nonna did it, and it's how i do it.

You, yes YOU reading these words are personally responsible for NOT selecting the nicest most perfect produce in the bins. Be a responsible adult and take the ugliest most blemished examples to the cash register. This is the direct message grocers need to stop catering to spoiled entitled shoppers who cause the waste to happen in the first place. It is not so painful if you select one of the four tomatoes or potatoes or apples you buy from the blemished ones, that is all we need you to do. Buy the chicken hearts, livers or gizzards and leave the white breasts in the display for the more selfish consumers. Grocers will not demand and order only the highest grade of unblemished fruits if YOU buy the ugly ones which of course have the same nutritional value. As in all sustainability issues, be the change you want to see. No one will do it for you.

Popeye Gordon As a professional healthcare practitioner I cannot recommend ever eating animal innards unless the alternative is starvation. The consumers will not have impact, the farmers and chefs will. My church is supplying 21,000 meals this weekend to children who are out of school this month and do not have subsidized meals over the summer. We CAN with a full kitchen, prepare foods using creative veggies and blemished fruits to make soup, stews, applesauce, pies, cobblers, shredded salads, etc. But not innards. I will not promote eating chicken or other animal organs. Frozen chicken preparation contaminates an entire kitchen with bad bacteria that inhabits the digestive system for about 10 days before your flora can muscle it out. It can cause UTI's in females. These are all recent studies found nutritionfacts.org 🙏
