Franca likes to dress her pasta with stewed artichokes mixed with ricotta and spiced with chilli; and also to grill artichokes over an open bed of coals. Both are delicious - especially when the artichokes are on the table within 2 hours of harvesting.
The town of Cerda holds an annual festival celebrating artichokes in April (so put it in your diary for next year).

Their own olive oil as well their own artichokes. A pasta and grill episode. Just when I didn’t think you could do these episodes better, you raise the bar again. She commands the kitchen. Thanks for another gem!

My mouth was watering even more than usual after watching this wonderful episode, so I decided I had to make the pasta dish! Even without those gorgeous regional artichokes (I did use fresh local ones) and lack of red spring onion in my part of the world (I used leeks) - the dish tasted as incredible as it looked. I’ll be making this often and thinking of Franca each time. Grazie mille!! ❤️😋

We have the same variety of artichokes in Malta 🇲🇹 south of Sicily. We stuff them with stale bread, garlic, olives, anchovies & parsley. Then we cook them in water. The traditional accompaniments are another story. Never had them barbecued like this though! The ricotta dish looks divine!

WOW! I love artichokes & those two dishes looked fantastic, what a treat you had getting to eat them. Artichokes & Cardoons always look so spectacular growing in a garden/field, almost prehistoric but that's dialled up to 11 with those spiked artichokes, they look like the plant Audrey II from Little Shop Of Horrors. In the 16th century artichokes could only be eaten by men as they were considered an aphrodisiac & that wasn't the done thing for a lady to do. Thankfully we're passed tat now. Brilliant video as always, though this one is an instant favourite, two brilliant dishes of one of my favourite things.[Liked the tip about rubbing your hands in the lemon juice to stop the 'chokes oxidising, clever trick & one I'll be pinching come summer!] Thanks again to you, the team & the grannies.

omg that is the biggest spring onion i have ever seen! i've never had fresh artichoke, only preserved jarred ones on a pizza, but these look so delicious.

DIO MIO...Franca reminds me so much of my Sicilian Grandma who was born in the same area as Franca. My Grandma did her artichokes almost the same way, but she stuffed a sliver of garlic between EACH leaf. Then olive oil and about a ton of salt! and baked them in the oven. My idea of heaven, and I am making them for Thanksgiving for my family = I Know they will love them. Thank you Franca - I will definitely try your luscious pasta recipe.

I have seen many delicious looking recipes in books, on KZbin, on TV. The Pasta Grannies recipes all look fantastic and delicious, but this is one of the most mouth watering ones I’ve ever seen anywhere.

My moms family is Sicilian and I grew up on artichoke’s and for a long time I was always amazing when people who would say they never saw or had one before. I thought everyone did lol

I've never had artichokes. :D I'm Czech - they're rare here. But this definitely made me want to try it... I had much the same experience with Philippino friends for whom our strawberries and apricots were as rare and exotic as for us mangoes or other such fruit... we taught them how to can fruit the Czech way one summer. It rather makes you appreciate that produce more. :-)

This brings back memories of my Neapolitan Mom smacking the artichokes against the kitchen counter. She made hers EXACTLY the same way, except she roasted hers in the oven. They were the best!

This one is a big winner; the dish itself, the location and Franca .. just love everything in her kitchen and the way she prepares her ingredients... and those grilled artichokes! Wonder if he covered the grill for them to be cooked better and more flavor.... Lucky you Vicky to get to try them .. although not a fan of white food, I'm sure it's delicious. Thank you for whoever lead you to Franca.... will be watching this again and again.. more videos with Franca please :) Thank you Vicky and team. :)

I love artichokes, and these two recipes I will definitely try! Too bad we only have the new variety of artichokes here, those spiny ones look intimidating, but I am sure that is to protect the deliciousness of the veggie! The "grilled" artichokes were a surprise, would never have thought of that. Terrific video with a terrific granny! Thank you for the great video.

These artichokes look amazing! I'm going to have to try roasting them over the coals like this next time. The thorns make me nervous, as I always get pricked by them, so I take the time to snip them off with kitchen shears. I'm lucky that I live in the Central Coast area of California, where the artichoke fields are plenty, and still owned by the families who brought them to the US!

When you travel around Italy, you always have to prepare yourself for new surprises. And this not only for tourists, but also for us Italians. When they say….“Italian cuisine”…..you say everything, but nothing is said. You have to discover it in every different region, in every city, in every small town, and every time you see something new.

I always wondered how to peel and cook artichokes. Quite an absent veg in my personal menu, not sure if it's because it's not popular in the UK. Pasta looks yummy! I always wonder why are there so little Italian immigrant in UK and watching these videos I think I'm starting to understand why. The climate, the food, the views of the land if you own it. Amazing.

There are certain towns which have big Italian communities from way back: for example Bedford, Cardiff, Glasgow - and London of course. One characteristic is they all go back to Italy for their summer hols to get their fix of sunshine. 🙂🌺 best wishes, Vicky
