Regarding सब नहीं , if someone is offering me 10 mangoes but I don't want all of them but maybe only 5, can I say सब नहीं धन्यवाद, पांच पर्याप्त हैं ?

Yes. Nicely done! You can also say सब नहीं (धयवाद), पाँच बहुत हैं। So बहुत literally means very or many but in a sentence like this it substitutes for enough (पर्याप्त). Also you can skip धन्यवाद in casual conversations but choice is yours.
